There is a saying " Too many cooks (read as Dishes) spoil the Broth, One cannot Relax while eating since you are being bombarded with continuous supply of food, the moment one tries to relish a dish that was served, your table is being invaded by battalion of Stewards with a new dish, The chef/management appears to be confused 🤔 in selecting their offerings, particularly trying to give a variety mix of North & South cuisines, that lack in authenticity in most dishes, which were either bland in taste, or modified to suit NRI taste is what my guess.
The Rasam vadai - rasam was good, but the vadai wasn't fried to the appropriate crisp texture, the colour was rather pale brown than Golden Brown,
The Avial was Totally Bland, lacking in yoghurt gravy, most of us didn't relish it,
The Paneer dish was yellowish, which was like more kulambu-watery consistency, paneer being super soft.
Potato curry has to be always considered as a filler and not as a replacement to poriyal or any other side dish, Hence, if the chef wishes to add Potato curry to the menu, he needs to consider offering an additional Poriyal like Cabbage Carrot, or any other green veggie poriyal, Here again the Potato curry was too bland in taste.
Now. having given critical remarks, I must confess that dal makhani was good, mini kesar peda, gulab jamun & icecream 🍦 were good.
Vadams, manathakali vatthal, Lotus stem vatthal, 4 types of Pickles, the Ginger pickle was great, though a bit sweet in taste,
Once again, it appears that in Payasam, the chef might have used Saffron Extract, rather than saffron stigmas, one could experience a mouth feel mild after- taste of the chemicals used in Saffron extract, as a carrier. Had they used infusion of pure Kashmiri saffron stigmas, the Payasam colour, Flavour & Aroma would have been next level.
Tandoori Rotis were thin like a South Indian Chappathi & Kulcha wasn't up to the mark. The typical nice South Indian fluffy pooris were missing.
The servings included Pre mix Sambhar Sadam, ( we would have preferred traditional Sambhar that was missing & sadam Separate), Beans Ussili, white Rice, Rasam, Podi ( that was coarse & bland), coriander sevai, Tamarind rice, white Pulav, Curd Rice had cut mangoes, which amounts to Viparith Aahar, (opposite Food combination)
Overall, the chef wanted to impress the guests with numbers, ( variety of food), but the true authentic flavour. The aroma and taste were missing, that the Chef ought to have focused on.
Of course their intent is good, 👍, but if the same is reflected in the food, by making it authentic then it would be really Great. The ambience is par excellence & service is of course Good, but their challenge is to serve too many varieties in numbers.
I am sure, the hosts will take these critical remarks in the right earnest and improve upon making dining a better experience, I will come back for sure, And recommend to friends....
