The thin crust cheese pizza, unfortunately, left much to be desired.
To begin with, the crust was excessively thin, which made it difficult to achieve a satisfying bite. I appreciate a crispy base, but this one bordered on flimsy. As for the sauce, I found it lacking in flavor, which was disappointing given the potential for a bold, harmonious taste. A pizza is often only as good as its ingredients, and sadly, this one didn’t deliver in terms of flavor depth.
That being said, I did indulge in their deep-fried calzone, which was a different story altogether. This dish was a delightful surprise, boasting a crispy texture that was hard to resist. The calzone had a satisfying crunchiness that complemented its gooey cheese filling, and while it shared the same sauce as the pizza, the crispy exterior made it more enjoyable and palatable. It’s as if the frying process added a layer of flavor that was awry in the pizza.
Despite my mixed feelings about the food, I can't overlook the passion and dedication of the staff at Pizza Fabbrica. While there's no shortage of great pizza in Bali, it's the atmosphere and service that makes this place stand out above the rest. The menu offers something for everyone (including fine wine), and you can taste the premium ingredients in each and every bite. The atmosphere is lively but at the same time very mature; music selection is tasteful and is played at a sensible volume, making it easy to chat with those at your table.
The #1 thing that keeps me coming back to Fabricca is their exceptional staff. It's evident from the moment you walk in that everyone there is working as a unified team. Edit with the answer of the business owner: Yes, we have finished the pizza with removing the burnt part, as we do not like to waste food. We have complained to your staff and they have done nothing. The crust was burnt at the side of the crust mostly but the full pizza have smell and light taste of burning. You cannot say “only slightly burnt” when you see the big piece of black crust I took in the photo.
You are giving yourself excuses instead of accepting the critics with humility as a business owner should do.
For the water, I have requested a glass of water, and your staff refused it (even if my friend ordered a Bintang !). She pointed the 25k++ bottle on the menu.
