Hmmm I’m trying to be fair in this review. Ambiance and decor is absolutely spot on, kudos. However, breakfast food was honestly underwhelming.. here is why: 1) with a nice looking and highly anticipated french-style cafe, we somehow expected food to be more presentable and flavourful. We ordered banana pancake which came a small slab of nutella and splatter of jam. Perhaps it would have been more presentable if those two were served in a tiny glass bowl. We also ordered eggs benedict and croque monsieur. Unfortunately, (as I do not eat pork), they had no alternatives to the ham for the eggs benedict dish (no salmon, chicken ham, etc.). After several to/fro, our waitstaff was able to assist by changing ham to pieces of chicken leg. We did enquire about the smoked Spanish mackerel listed on the menu to be served with scrambled eggs, however, this too was not available for breakfast (kosong?). Taste of eggs and hollandaise sauce was pretty good, however, no salt and pepper in sight on the table. Croque monsieur ordered by my friend served on white toast tasted pretty good but serving was again underwhelming (see picture of the serving).. why such small plate? 2) timing… the plate of banana pancake came about 35 mins after we ordered, a tad long but the others came soon after. 3) price was very fair, no complaints here 4) service.. i understand this is a new establishment so i would have to give it another try much later again. I think our waitstaff was challenged by our request on what was available other than pork for our eggs benedict and he seemed unsure on what might be available, but we did appreciate his final solution - pieces of chicken leg meat. As a small café owner myself, I suggest advising the staff to be more attentive especially long after we finished our meal. It would have been nice if they checked on us to see whether we would like to order anything else. It was around 10am and only two other tables were filled, so the place was not busy at this time. I wish this cafe well and hope things can improve.. overall thank you for this first try. It’s good to have new places open up in Sanur!

The location itself stands out, featuring a unique and beautiful theme that creates a spacious and enjoyable dining atmosphere. Notably, the restroom maintained a commendable level of cleanliness. Parking poses a challenge for cars, yet the nearby supermarket provides a viable solution, while the recommendation for bikes aligns perfectly with the easier parking option they afford. In summary, Brasserie Republique excels in offering an extraordinary dining experience. Its authentic flavors, well-prepared dishes, and amicable service are housed within a uniquely themed and spacious setting. Despite minor service interruptions and size preferences, it remains an immensely recommended dining destination.

I must say, my experience at the République was truly delightful. The staff extended a warm and gracious welcome, offering an impressive selection of six wine options by the glass, featuring both French and international wines at reasonable prices. As a starter, I savored the spinach ravioli which was delectable. The steak I ordered was served with homemade French fries and a flavorful pepper sauce that was the best I have had in Bali, despite having lived here intermittently over the past seven years. The service staff was attentive and checked on me without any undue pressure, which made for a pleasant dining experience. While it may be suggested that salt and pepper be provided directly on the table at the beginning of service, this is merely a minor suggestion. I must commend the owner for their exquisite taste in design and decoration, as it was delightful and tastefully done. The traditional French atmosphere, from the décor to the music, was a wonderful touch. Congratulations are in order for the owner on this new venture, as I myself own a French restaurant in Thailand and can appreciate the effort and hard work that goes into running such an establishment. I am eager to return and try the desserts, and wish the owner continued success in their business.

I must say, my experience at the République was truly delightful. We ended up visiting twice, once for breakfast and once for lunch. The decor, the atmosphere and the whole set up is in the style of a French Parisienne Cafe, with timber floorboards, white tiles, wooden tables and chairs, leather lounges, green potted palms - very stylish. Whilst there is an outdoor dining area facing the street, through the timber French doors is an air conditioned (with ceiling fans) dining area - so much cooler on a hot humid day.

The staff there generally all speak English, but it was fun practising my French with one of the waiters. Breakfast is from 7:00am to 11:00am - with crepes, croissants, English breakfast, eggs benedict, smoothie bowl, hot sandwiches. Lunch and Dinner is from 11:00am to 11:00pm.

For breakfast we had the eggs benedict (IDR 75) and a croque madam (IDR 75) - hot sandwich with ham, bechamel, cheese and egg, with a fruit platter (IDR 45), fresh juices (IDR 39) and hot tea (IDR 29). It was a delightful breakfast better than the resort we were staying in. When we were there for lunch, we had the Salad Parisienne (IDR 99) and fish & chips (IDR 105). The batter on the chips was light and tasty but the fish was a little disappointing really needed the rémoulade sauce to lift it.

The only real issue we had was when we went to pay - they had problems connecting and facilitating their online payments. This was despite their WiFi working perfectly. A lot of customers didn't have sufficient cash, so they had to go to the ATM up the road to ensure they had enough money to pay. We never had this problem at any other restaurant in Sanur. Apparently, this is a regular occurrence at Republique Brasserie and happens often. So, if you proposing to eat here make sure you have enough...
