Personally I think Bakmi Karet Krekot serves the best noodles in Jakarta. This is the original HQ so I recommend going here to get the best taste. Exactly what I like, salty, savory and not sweet at all. The noodles are chewy or you can say "rubbery" hence the name "Karet" which translates to rubber, but definitely in a good way. Probably a stage before it becomes al dente. The seasoning oil mixture coats the noodles really well so you get a consistent taste throughout the whole bowl. Add the chili sauce if you want it to be spicy. Btw you can let the waiter know if you prefer thigh or breast meat. If you want more chicken on your noodles you can request for "double" meat. They also serve pretty good bakso goreng or fried meatballs but they usually run out quite fast so you'll have to come earlier to get them. Once you're done eating, go out to the front and order some "kue ape" from the roadside vendor. It's like a small circular pandan crepe and it's a nice ending to your savory meal. The noodles are thick in 2 dimensions (the 2 dimensions that are not length) just as other karet noodles. Texture/hardness is more to the hard/chewy side of the spectrum, not soft. The noodles themselves are already seasoned and always boiled to perfect doneness (you can order for longer boil if you prefer softer noodles). The topping is boiled ayam kampung and if they still have enough choices, you can choose between all breast meat, all thigh meat, or mixed meat. The mixing sauce tastes like soy sauce and pork oil (rendered lard). You’ll have sambal and green onions on your table.
Their whole bowl is amazing — seems to be a testament of their well-established name and decades of experience. Chewy noodles, perfectly seasoned, with great texture. The chicken meat is always fresh. The broth soup is very amazing and tastes really soul-warming. I like to put in a spoonful of the soup + some sambal to my bowl to give the noodle bowl some extra oomph.

Ok. I'm partial to this noodle because I've been eating it since I was a kid. But, partial that I am, I really believe that this is hands down the best noodle in Jakarta. THE. BEST.
Yes, it is expensive. Yes, the old lady is annoying. But, it is DELICIOUS.
The bouncy springy noodles. The smooth chicken thighs on top. Salty chicken-y sauce at the bottom. And the piping hot soup. Everytime I eat the noodle, I feel proud to be a Jakartan Chindo.
Most noodles that came from outside Jakarta are sweet and come with a thousand combination of toppings. But, they are still in business for soooo long with just one kind of topping, and one kind of noodle. So, they definitely do something right.
So, if you don't want to spend years of your life coming back to the same rundown looking noodle hut that cost you an arm and a leg to eat a bowl of noodles, do not; I repeat: DO NOT come to this place.
