Sono un ex alunno della fondazione "Le Costantine" situata a Casamassella (LE) ove ho frequentato un corso formativo relativo sulla Panificazione\Pasticceria .. Nei vicini mesi precedenti noi dieci ragazzi, me compreso, del corso ci siamo recati ad Alberobello nell' istituito di Alta formazione culinaria " Eccelsa" . In quella struttura così bella,pulita, colorata,ben arredata e con attrezzature favolose che ogni panettiere, pasticcere,cioccolatiere, chef, pizzaioli vorrebbero avere ho incontrato un vero e proprio Artista nel settore della panificazione il sig. Mario . Personalmente ha segnato la vita nel mio settore. La sera prima di partire ci siamo recati nel suo piccolo locale, per me è come se ero a casa mia , l ambiente era caldo, confortevole e bello !!!
