每个在海外的中国留学生都会有让自己所魂牵梦绕的一种味道,那就是家乡菜的味道。作为四川人,这种对家乡川味的追寻更加强烈。就像在外国旅游的意大利人总会在品尝完当地美食后始终不忘感慨意大利菜的美味与唯一一样,在海外的四川游子也会寻觅家乡的四川味道。在来到意国6年后,终于找到了一个地方,一个能让我感慨不用回国就能吃到在老家才能吃到的味道,这个地方就是归蜀。一家位于米兰市中心的川菜餐厅。

名至而归,蜀香巴韵。第一次听到归蜀这个名字是在2017年的时候,餐厅刚开业不久,当时还在念大三,但是因为对本地用川菜来作为噱头吸引食客的餐厅的普遍失望,在之后的两年始终没有“鼓起勇气”前往,似乎希望这一家听名字就能让人回家的地方不使自己失望。终于两年后,被自己训练成吃辣小能手的塞尔维亚老铁小伙伴的带领下抱着试试水的心态推开了餐厅的大门。

映入眼帘的两缸泡菜罐立刻吸引了我的眼球,作为四川人,对泡菜的感情也是溢于言表的。小时 候,家人每年都会准备一到两缸泡菜以便食用。当我看到大厅中央那两缸满满的各式蔬菜制备的泡菜的时候,心中已经有了一种小激动,似乎已经将我的疑虑打消了一半。在老板热情的招呼坐下来之后,一听也是四川人,便开心的用四川话交流了起来。于是离家又近了一步,终于在米兰找到了一家四川人开的川菜店。之前去莫斯科,巴黎,马德里,日内瓦和伦敦的时候都有尝试过寻找当地的川味,有些让人大跌眼镜有些让人意外惊喜(但有一道菜始终没有如愿找到家乡的味道—麻婆豆腐)反而在米兰,这座生活学习工作的城市这么久一直寻味未果之后,仿佛那一刻终于开始期盼那种我所期待的川味。

老板一家是四川凉山州西昌人,凉山州作为四川和云南交界的地方物产丰富,所出产的山珍和各种香料以及亚热带水果的品质都是一流的。在食物上我早就听说有出名的狼牙土豆,在翻开菜单之后的第一眼就看到了它的身影,再一次更加确定了,这里不会让我失望的。于是乎控制住自己激动的情绪,首先就点了我每到一家川菜馆必试的麻婆豆腐。

麻婆豆腐是一道满含了四川人家乡感情的名菜,麻婆豆腐的麻来自于食材中花椒的使用,麻婆豆腐的香和酥的口感则来自于豆瓣酱和肉末的完美搭配,剩下的便是那种让你有冲动想直接通过勺子将其一勺勺直接和配料以及米饭一起送入口中的豆腐。在欧洲的川菜馆的试味上一直对这道菜存疑,心中暗想,如果这家店的麻婆豆腐能够达到我心中的那种味道的话就算功德圆满了。作为西昌的名菜我点了第二道狼牙土豆,狼牙土豆以其形状如狼牙得名,在熟后配上干或湿辣椒面制成,也是检验一家川菜馆所用辣椒质量的好选择。第三道菜棒棒鸡,也是川菜中的名菜。和驰名于欧洲各大川菜馆的口水鸡不同,在制作上需要更加下功夫,在鸡肉烹制到熟而不柴后一片片撕下再加入红油辣椒花椒以及其他佐料拌匀后食用,鸡肉必须要特别新鲜不然一吃便知。再要了一碟泡菜和两碗白米饭,老板一句四川话的要得,让我忍不住搓起手掌来等待即将到来的美味。

由于当时是中午,我们俩人点的菜不一会儿便上齐了,分量很大气,菜品从形上面已经将我的疑虑降到了最低。特别是麻婆豆腐,那一层花椒面在刚好被红油所淹没的豆腐上被葱花配成的格外迷人眼球,中间的肉末也明晰可见;狼牙土豆造型统一,一根根错落有致,一看就是炸的恰到好处配上红红的辣椒面让人充满食欲;棒棒鸡丝丝见汁儿,每一根都和汁水接触均匀了的,我已经按耐不住了。由于和我的塞尔维亚老铁一起,强忍着口中的馋,在菜上齐后终于开始动筷子。首先入口的是泡菜,那脆爽的蔬菜丁口感和纯正的四川泡菜的酸味配上厨师加进去的辣椒汁,一瞬间让我享受的闭上了眼,就是这个味道 !!!于是,放心的找老板要了一个调羹(在四川话中比起勺子更喜欢说调羹),用来盛麻婆豆腐用的毫无疑问。我激动得将一勺泛着诱人油瓜和花椒面的麻婆豆腐合着肉末和汁水放入了口中。就是这个味道!!!麻婆豆腐,在欧洲寻觅了许久,失望了许久之后,我终于找到了你,在归蜀找到了四川人的麻婆。入口的香气扑鼻的花椒味鲜香即刻便和香辣完美浸入了的豆腐融合在了一起,就是这种先麻爽再香辣再一次让我闭上了眼睛享受,感受到了真正的属于四川人的幸福的感觉。来自肉末的香酥再一次将味蕾推上高潮。心中暗赞:厨师真太牛了!!!把我盼星星盼月亮的正宗麻婆豆腐给做出来了。对面的小伙伴先尝试了棒棒鸡,我睁眼一开,一口气将好几条塞入嘴一面已经将筷子再次放到盘中了,我问他的评价,顾不上答我,连比了三下大拇指!我来不及尝试已经把老板叫住,要和他分享我激动的心情,那种老乡见老乡,和家乡味道一起两眼泪汪汪的感情!“太 太 太 ...

An absolute gem in Milan! Cosy ambience with original artwork and comfortable seating. Service was super friendly and welcoming and spoke great English- which was great because our Italian is terrible! The food was authentic Sichuan, right down to the Chilli. The complimentary pickles were delicious! Prices very fair, we over ordered and took 5 dishes, 3 rice and two drinks and the bill only came to 40e. Most menu items between 4-9euros. THE best dinning experience in a while :) We didn’t manage to book in advance, turnout to be their day off… Lao ban took us in and said: “Don’t worry, I’ll cook for you. “ I almost burst into tears, receiving kindness from a complete stranger, feeling like walked into grandma’s kitchen.

The dishes were absolutely delicious, authentic enough for true Sichuan cuisine lover, but gentle enough for expats who can’t handle real spicy...

Questa sera avevamo voglia di mangiare fuori anche se non avevamo tanta fame. Così inizia la nostra serata del sabato sera. Praticamente eravamo a casa solo che ad un certo punto ci stavamo annoiando e quindi abbiamo pensato e deciso di andare a mangiare fuori. Non avevamo molta fame ma comunque volevamo cenare fuori. Abbiamo deciso di scegliere la cucina del Sichuan e quale posto migliore se non il ristorante della cucina dello Sichuan Guishu. Abbiamo ordinato come antipasto le patate fritte del gombau buonissime anche se le abbiamo mangiate alla fine. Poi abbiamo ordinato la zuppa in bianco con il Tofu che era sinceramente buonissima molto semplice ma perfetta con del cavolo (non c’è foto) e poi del pollo alla gongbae stupendo con le arachidi che consiglio a tutti (foto del piatto manca pollo) e poi anche del riso in bianco buonissimo che non è arrivato e poi il tofu con il macinato ma era un po’ piccante (foto 2 infatti un po’ è rimasto)(stavo sudando anche perché era piccante) e poi soprattutto abbiamo ordinato i fagiolini saltati che erano una squisitezza della casa e per il palato. Alla fine abbiamo spolverato tutto come si vede . Personale super bravi ragazzi continuate così torneremo ancora presto. Atmosfere romantica (foto 4) consigliata per San Valentino alle porte

每个在海外的中国留学生都会有让自己所魂牵梦绕的一种味道,那就是家乡菜的味道。作为四川人,这种对家乡川味的追寻更加强烈。就像在外国旅游的意大利人总会在品尝完当地美食后始终不忘感慨意大利菜的美味与唯一一样,在海外的四川游子也会寻觅家乡的四川味道。在来到意国6年后,终于找到了一个地方,一个能让我感慨不用回国就能吃到在老家才能吃到的味道,这个地方就是归蜀。一家位于米兰市中心的川菜餐厅。 名至而归,蜀香巴韵。第一次听到归蜀这个名字是在2017年的时候,餐厅刚开业不久,当时还在念大三,但是因为对本地用川菜来作为噱头吸引食客的餐厅的普遍失望,在之后的两年始终没有“鼓起勇气”前往,似乎希望这一家听名字就能让人回家的地方不使自己失望。终于两年后,被自己训练成吃辣小能手的塞尔维亚老铁小伙伴的带领下抱着试试水的心态推开了餐厅的大门。 映入眼帘的两缸泡菜罐立刻吸引了我的眼球,作为四川人,对泡菜的感情也是溢于言表的。小时 候,家人每年都会准备一到两缸泡菜以便食用。当我看到大厅中央那两缸满满的各式蔬菜制备的泡菜的时候,心中已经有了一种小激动,似乎已经将我的疑虑打消了一半。在老板热情的招呼坐下来之后,一听也是四川人,便开心的用四川话交流了起来。于是离家又近了一步,终于在米兰找到了一家四川人开的川菜店。之前去莫斯科,巴黎,马德里,日内瓦和伦敦的时候都有尝试过寻找当地的川味,有些让人大跌眼镜有些让人意外惊喜(但有一道菜始终没有如愿找到家乡的味道—麻婆豆腐)反而在米兰,这座生活学习工作的城市这么久一直寻味未果之后,仿佛那一刻终于开始期盼那种我所期待的川味。 老板一家是四川凉山州西昌人,凉山州作为四川和云南交界的地方物产丰富,所出产的山珍和各种香料以及亚热带水果的品质都是一流的。在食物上我早就听说有出名的狼牙土豆,在翻开菜单之后的第一眼就看到了它的身影,再一次更加确定了,这里不会让我失望的。于是乎控制住自己激动的情绪,首先就点了我每到一家川菜馆必试的麻婆豆腐。 麻婆豆腐是一道满含了四川人家乡感情的名菜,麻婆豆腐的麻来自于食材中花椒的使用,麻婆豆腐的香和酥的口感则来自于豆瓣酱和肉末的完美搭配,剩下的便是那种让你有冲动想直接通过勺子将其一勺勺直接和配料以及米饭一起送入口中的豆腐。在欧洲的川菜馆的试味上一直对这道菜存疑,心中暗想,如果这家店的麻婆豆腐能够达到我心中的那种味道的话就算功德圆满了。作为西昌的名菜我点了第二道狼牙土豆,狼牙土豆以其形状如狼牙得名,在熟后配上干或湿辣椒面制成,也是检验一家川菜馆所用辣椒质量的好选择。第三道菜棒棒鸡,也是川菜中的名菜。和驰名于欧洲各大川菜馆的口水鸡不同,在制作上需要更加下功夫,在鸡肉烹制到熟而不柴后一片片撕下再加入红油辣椒花椒以及其他佐料拌匀后食用,鸡肉必须要特别新鲜不然一吃便知。再要了一碟泡菜和两碗白米饭,老板一句四川话的要得,让我忍不住搓起手掌来等待即将到来的美味。 由于当时是中午,我们俩人点的菜不一会儿便上齐了,分量很大气,菜品从形上面已经将我的疑虑降到了最低。特别是麻婆豆腐,那一层花椒面在刚好被红油所淹没的豆腐上被葱花配成的格外迷人眼球,中间的肉末也明晰可见;狼牙土豆造型统一,一根根错落有致,一看就是炸的恰到好处配上红红的辣椒面让人充满食欲;棒棒鸡丝丝见汁儿,每一根都和汁水接触均匀了的,我已经按耐不住了。由于和我的塞尔维亚老铁一起,强忍着口中的馋,在菜上齐后终于开始动筷子。首先入口的是泡菜,那脆爽的蔬菜丁口感和纯正的四川泡菜的酸味配上厨师加进去的辣椒汁,一瞬间让我享受的闭上了眼,就是这个味道 !!!于是,放心的找老板要了一个调羹(在四川话中比起勺子更喜欢说调羹),用来盛麻婆豆腐用的毫无疑问。我激动得将一勺泛着诱人油瓜和花椒面的麻婆豆腐合着肉末和汁水放入了口中。就是这个味道!!!麻婆豆腐,在欧洲寻觅了许久,失望了许久之后,我终于找到了你,在归蜀找到了四川人的麻婆。入口的香气扑鼻的花椒味鲜香即刻便和香辣完美浸入了的豆腐融合在了一起,就是这种先麻爽再香辣再一次让我闭上了眼睛享受,感受到了真正的属于四川人的幸福的感觉。来自肉末的香酥再一次将味蕾推上高潮。心中暗赞:厨师真太牛了!!!把我盼星星盼月亮的正宗麻婆豆腐给做出来了。对面的小伙伴先尝试了棒棒鸡,我睁眼一开,一口气将好几条塞入嘴一面已经将筷子再次放到盘中了,我问他的评价,顾不上答我,连比了三下大拇指!我来不及尝试已经把老板叫住,要和他分享我激动的心情,那种老乡见老乡,和家乡味道一起两眼泪汪汪的感情!“太 太 太 正宗了!”我当时已经词穷找不到其他的话语来表达心中的冲动

THE best dinning experience in a while :) We didn’t manage to book in advance, turnout to be their day off… Lao ban took us in and said: “Don’t worry, I’ll cook for you. “ I almost burst into tears, receiving kindness from a complete stranger, feeling like walked into grandma’s kitchen. The dishes were absolutely delicious, authentic enough for true Sichuan cuisine lover, but gentle enough for expats who can’t handle real spicy dishes:) Recommend!

Questa sera avevamo voglia di mangiare fuori anche se non avevamo tanta fame. Così inizia la nostra serata del sabato sera. Praticamente eravamo a casa solo che ad un certo punto ci stavamo annoiando e quindi abbiamo pensato e deciso di andare a mangiare fuori. Non avevamo molta fame ma comunque volevamo cenare fuori. Abbiamo deciso di scegliere la cucina del Sichuan e quale posto migliore se non il ristorante della cucina dello Sichuan Guishu. Abbiamo ordinato come antipasto le patate fritte del gombau buonissime anche se le abbiamo mangiate alla fine. Poi abbiamo ordinato la zuppa in bianco con il Tofu che era sinceramente buonissima molto semplice ma perfetta con del cavolo (non c’è foto) e poi del pollo alla gongbae stupendo con le arachidi che consiglio a tutti (foto del piatto manca pollo) e poi anche del riso in bianco buonissimo che non è arrivato e poi il tofu con il macinato ma era un po’ piccante (foto 2 infatti un po’ è rimasto)(stavo sudando anche perché era piccante) e poi soprattutto abbiamo ordinato i fagiolini saltati che erano una squisitezza della casa e per il palato. Alla fine abbiamo spolverato tutto come si vede . Personale super bravi ragazzi continuate così torneremo ancora presto. Atmosfere romantica (foto 4) consigliata per San Valentino alle porte
