At the Bistrot, the dominant color is red, which is complimented by the soft lighting and the artisanal wooden walls and ceiling. The red color of the Bistrot makes one immediately think of the Negroni, which happens to be one of the most requested classics at the bar. There is also the Negroni Aged, a barrel-aged negroni with London dry gin, Barolo Chinato, Campari bitter and four artisanal sweet vermouths that has been aged for 2 months in a Chestnut wood barrel. Because of its popularity with guests of the Bistrot, it has been a signature “fuori menù” since 2019. The focus for Virili and his team is delivering perfectly executed classics as well as artful reinterpretations of timeless recipes. Other popular classics at the Bistrot, perhaps of no surprise given the wintery surroundings, include whiskey-based Boulevardier, Manhattan, Old Fashioned and Sazerac cocktails. The team prides itself on reproducibly executing their cocktails, as exemplified by their house Martini cocktail, which includes Tanqueray 10 gin pre-mixed 3:1:1 with Noilly Prat dry vermouth and water in the same bottle. In this way, the Tanqueray bottle can be removed from the freezer at -10˚C with the liquid poured directly into a chilled coupette from the same compartment, to ensure the same ice cold and crisp Martini each and every time.

My fiancé and I got a reservation via recommendation from the Michelin Guide and we were not disappointed!! The food was awesome (foie gras, chateaubriand), but the real standout was the service. We were treated like family, the host (Matti (?)) came over and welcomed us, and the whole evening just felt super warm, friendly, and very professional. Great last night meal in Corvara.

We came to this restaurant with high expectations, it turns out the money was not worth it at all. The service was quite slow. The quantities were too small and all dishes lacked salt. The bread was low quality and not fresh (see picture). Not up to a gastronomic restaurant’s standards. Absolutely disappointing!

My fiancé and I got a reservation via recommendation from the Michelin Guide and we were not disappointed!! The food was awesome (foie gras, chateaubriand), but the real standout was the service. We were treated like family, the host (Matti (?)) came over and welcomed us, and the whole evening just felt super warm, friendly, and very professional. Great last night meal in Corvara.

We came to this restaurant with high expectations, it turns out the money was not worth it at all. The service was quite slow. The quantities were too small and all dishes lacked salt. Dopo 13 presenze alla maratona delle dolomiti con il consueto passaggio al bistrot di Michil eccomi purtroppo a dover accettare che crolla anche questo mito. Esperienza pessima di servizio e cibo. Tavolo di 8 persone con una bambina di 13 anni attendiamo fin dall’inizio un po’ troppo tempo per ordinare. Antonio il direttore dedica la sua attenzione ad un tavolo delle stesse nostre dimensioni ma con due persone e da noi non si fa proprio vedere. Due giovanissimi e volenterosi camerieri si applicano per noi (spero incrementando la loro curva di esperienza). Alla lettura del menu con l’ordine non viene accompagnata nessuna spiegazione per cui arriva la tartare di carne sopra ad un osso tagliato a metà con il midollo. Un paio di noi amanti delle interiora apprezzano, gli altri inorridiscono. Andava magari spiegato. Ma l’insalatina delle Dolomiti a 26€ tocca il massimo di questa orrida esperienza: foglioline di erba mista (da noi si chiama misticanza) in quantità misere (la porzione di un gatto) e soprattutto davvero triste da guardare. Costo della materia prima zero (raccolte dietro l’hotel forse), qualche centesimo la preparazione. Buon margine per loro. Poi arrivano le tagliatelle che effettivamente erano descritte nel menu come ripiene al tartufo. Si tratta di due (dico due) grosse tagliatelle arrotolate con besciamella e sopra foglie di tartufo (in Abruzzo sono crespelle). Costo 36€ (potete verificarlo sul menu!). Abbiamo tutti fame al termine del lauto pasto ma non andiamo oltre. Un capoverso a parte merita il vino. Chi non conosce la lista dei vini della Perla e la famosa cantina, uno spettacolo la visita. E la lista è enciclopedica. La richiesta della bottiglia, un terlano Winkl a 55€, non porta esito. Dobbiamo sollecitare più volte e ormai arrivando gli antipasti si presenta la sommelier. Perlomeno scusandosi e con grande empatia devo dire ci dice che sta correndo tra i tavoli per soddisfare le richieste e percorrendo l’immensa cantina per trovare le bottiglie. È davvero affannata e sudata, sta facendo del suo meglio anche parlando con i clienti. Chi sta davvero gestendo male la situazione è il buon Antonio che non muove un dito per il nostro tavolo. Sollecitato per il vino ci risponde che deve arrivare la sommelier. Poco prima sono sicuro di averlo visto al tavolo della coppia di cui sopra stappare una bottiglia. E in ogni caso in una situazione come questa agisci e aiuti il tuo sommelier (il vino lo conosco e non avevo bisogno di indicazioni o narrazioni di qualche tipo, solo berlo!). Caro Michil, il bistrot lo hai messo in cattive mani, un peccato. Hai creato una manifestazione grandiosa e il passaggio al tuo hotel o al tuo bistrot o al tuo ristorante stellato è sempre stato un corretto omaggio al tuo...

Ho visitato questo bistrot con grandi aspettative, avendo avuto un’ottima esperienza appena due giorni prima nel ristorante stellato dello stesso edificio, con cui condivide anche la cucina. Nel complesso, l’ambiente e il servizio erano gradevoli, ma la mia esperienza culinaria con il tomahawk ha lasciato a desiderare.

Sebbene la parte esterna della carne fosse saporita e molto tenera, alcune sezioni, specialmente quelle vicino all’osso, emettevano un odore piuttosto intenso e sgradevole. Quando la cameriera ci ha chiesto se fosse andato tutto bene noi abbiamo cercato di ottenere informazioni sulla provenienza della carne, ma la richiesta si è persa in seguito ed è rimasta senza risposta. Questo, combinato con la qualità della carne, ha offuscato notevolmente la mia serata.

Date le circostanze e la distanza da casa mia, è improbabile che tornerò nel breve futuro. Tuttavia, mi auguro che il bistrot valuti attentamente questo feedback per garantire un’esperienza migliore e più coerente ai futuri clienti.

Edit. Non volevo in alcun modo sminuire la qualità della carne facendo quel paragone(ora rimosso) ma solo mettere in luce l’odore che quella sera il taglio emanava nella parte dell’osso. La carne era ottima e sapevo per certo fosse la frollatura ma resto dell’idea che quella frollatura fosse eccessiva o che magari ci fosse stato qualche problema di gestione perché di carni ne ho assaggiate diverse in vita mia, non sarò un esperto ma qualcosina ne capisco e quella parte lì era molto molto forte.

Per il resto aggiorno la recensione perché a parte questo intoppo per il quale volevo solo ottenere l’informazione per mio scrupolo sulla provenienza della carne giusto per capire anche io che razza fosse e non perché mettevo in dubbio la qualità(mai discussa). È stata una serata molto bella e si vede l’impegno di tutti per cercare di renderlo un posto molto...
