Ichigen is one of my favorite ramen ever, I love everything about their ramen, I always go to main store in Sapporo but I try to stop by at this airport location before my flight to have one more bowl of incredible ramen.
They are the most popular one in ramen street inside of CTS airport, around lunch time, there is long lineup. People do not stay long so normally you do not need to wait too much but be careful if you are flying on the same day, don’t miss your flight even though this ramen may be worth it!
My favorite is Ebi shio with regular soup. This one tastes shrimp flavor the most and I love it. I also like Ebi miso with rich soup. This one is a blend of regular soup and tonkotsu soup, it has more fatty flavor, most of my foreign friends enjoy this one the best.
They have thick and thin noodle, my favorite is thick one. Thick one is Hokkaido style thick yellow chewy noodle, I love the texture of it. I love all the topping they have, especially the shrimp crumble and ramen egg.

You can dine in a last ramen lunch or dinner at the Hokkaido Ramen Dojyo (Most popular ramen restaurant that runs the arcade through the dining area of the New Chitose Airport located at 3rd Floor) . It is easily to recognise with the giant map of Hokkaido made out of ramen bowls!
One of the famous Hokkaido Ramen “ Ebisoba Ichigen 一幻 ” arcade is just standing very near to the Ramen Dojyo entrance.
The characteristic of the “Ebisoba Ichigen Ramen Soup" was made up of prawn broth. You can choose an original soup flavor Or 3 kind of rich flavor (i.e. : shrimp miso, shrimp salt & shrimp soy sauce), choices of thick or thin noodles. Besides, you also can add on some rice, side dishes and drinks as well. The menu was user friendly in 4 languages i.e. : Japanese, English, Chinese & Korean.

In my ramen and gastro journey, this place rates as follows: #3 ramen #6 gastro The noodles are deliciously thick and cooked to the right level of consistency. No matter which broth you pick you have two options for customization: traditional or tonkotsu/pork infused. Regardless, the broth is shrimp based which is quite special and I can only find it in Hokkaido. The shrimp taste is prevalent throughout the taste profile and from the minute it touches your buds to the aftertaste. Every other flavor synthesizes well with the shrimp taste and nothing overpowers the shrimp flavor. The chashu (pork slices) are extremely tender, fragile even, to the point where you can't really keep them whole.
