Brilliant tonkotsu ramen spot. Not that far from Fujisawa station's north exit. It's iekei style, so if you can choose between the type of noodles, how soft you want them, the amount of oil and whether you want a stronger taste or not.....I had the regular tokotsu so the only choices we had were about the noodles. I like the fat noodles and I like to have them al-dente (固め). They were cooked perfectly. The soup is a rich meaty soup, but one that doesn't feel heavy or oily. The 味玉 topping was also cooked well, the yolk just runny. I got the charshu topping also and it was good without being mindblowing. The shop is clean & cool, and even an hour before closing (15:00 close), it was full of customers. Always a good sign! When ordering the ramen, we can choose the type of noodle, thick or thin, the level of noodle firmness, as well as how strong you want the flavour to be, and how oily.
