I remember eating at Hakata Issou for the first time several years ago and being blown away by its broth, and how it struck the delicate balance between 'old school' Hakata ramen and the more recent trends in the ramen scene. I've since eaten at Hakata Issou every time I visited Fukuoka, and the only change that took place between my first and latest visits is the store (deservedly) moving higher up in Tabelog rankings. The broth at Hakata Issou is not as salty and fatty as some of the more classic tonkotsu broth one can still find in Fukuoka. It will probably come across as more palatable to a wider audience for this reason, and, also for the very same reason, Fukuoka locals, especially those of the older generation, occasionally complain that the broth at Issou is not 'authentic'. But Issou's trademark frothy broth, if lacking some of the qualities of classic Showa-era pork broth, in no way lacks depth: it is rich, unique, and flavourful. Though preferences will inevitably differ amongst connoissuers of Hakata ramen, no one can deny that the quality of the broth here is top-notch. While those who are inclined toward thicker and/or charred chashu might be disappointed by Issou's thin and lightly seasoned chashu, it nonetheless suits the kind of broth on offer. The ajitama (seasoned egg) is excellently prepared. The yolk is perhaps a bit harder than average, but this also means that it does not spill into the broth when soaked. Seasoning is relatively subdued in both the chashu and ajitama, a quality that I have come to regard positively. For the broth is what deserves the most attention at Hakata Issou, and nothing else should overpower it. One can choose the firmness of the noodle, although I have the impression that the staff tends to forgo explaining the availability of that option to customers who do not speak Japanese. At the time of this review, Hakata Issou offers one of the finest tonkotsu ramen in town, one that I believe every visitor to Fukuoka should give a try.

Our visit to this recommended ramen 🍜 restaurant in Fukuoka proved to be a delightful and unforgettable experience. The anticipation built as we approached the establishment in the early morning, only to find a long queue already formed outside. However, the wait was worth it. Hakata Issou's claim to fame lies in their signature broth, aptly named the "pork bone cappuccino." Despite the absence of coffee, the term "cappuccino" accurately describes the frothy essence of the soup, achieved by their ingenious use of 2-3 times more pork bone than other ramen places. The ramen itself surpassed all expectations, making it the epitome of tonkotsu-based delicacies. The flavor of the broth was simply exceptional, with a depth and richness that lingered on our palates for hours after the meal. Accompanying the broth were noodles of the highest quality, boasting the ideal balance of chewiness and slurpiness. Although I would be hard-pressed to find fault, if I were to offer one small critique, it would be that the egg lacked marination. Nevertheless, the plain soft-boiled egg still harmonized wonderfully with the overall dish. In conclusion, if you find yourself in the Fukuoka area, I cannot emphasize enough how much I recommend visiting this remarkable ramen shop. Hakata Issou's dedication to their craft is evident in every bowl they serve, and I am confident that, like me, you will savor this extraordinary culinary experience for years to come.

My family and I visited Hakata Issou around 8 PM and had to line up with some Japanese office workers who had just gotten off work. They were kind enough to let us know the process and where to line up properly so that we didn’t block the entrance to a different restaurant. The wait was about 20 minutes since the place was packed, but people didn't linger after finishing their food, and the servers were very efficient. The shop is small but cozy. We had to split into two groups to be seated faster but it was okay. We ordered through a ticketing machine, which had English translations for the main dishes. I noticed some tables had gyoza and I also wanted some for myself. It was easy to ask the staff for help, and they were very kind in assisting us. The gyoza perfectly complemented my main ramen order, and I wished I had ordered a plate of 10 instead of 5 since they were smaller than what I’m used to. The ramen, with its tonkotsu-based broth, tasted way different from any tonkotsu I've had before. It was deep, rich, and everything in that large bowl worked so well together. The meal was very filling, and we all had a great time. It was worth the visit and the wait.

You would notice it’s strong smell of Tonkotsu(pork bone based soup) even from the outside of the restaurant but do not leave the place until you actually try the food (it takes time but you get used to it). The ramen here is amazing and you will not regret it. You would probably see a line outside when you visit. You first need to line up. After the person in front of you in line went inside and come back to the line, it is your turn to go into the restaurant and buy the ramen ticket (Be aware that this restaurant only accepts cash). You go back in the line and you just need to wait. Later, the waiter/waitress will come out to collect the ticket so when you give the ticket you let them know how you want the noodle to be served. Futsū(normal) Katamen (Hard) Barikata (extra hard) Harigane (Extra extra hard) Konaotoshi (almost raw) -> hard or extra hard is strongly recommended If you finish the noodle but not satisfied, you can order Kaedama (another bowl of noodle) with just 100 yen. Make sure to leave some soup if you want Kaedama tho. Enjoy! Soup and noodles are amazing and this is a must try in Hakata!!

We accidentally walked pass this ramen shop, it was cold and wet so we wanted something hot. There was a small queue around 6:30 when we arrive. We didn’t had to wait long, it took us around 10-15mins to get seated. Before you get seated, the staff will ask you to buy your tickets in a vending machine, it’s all in Japanese so he didn’t understand what it was, the staff saw us struggling so he gave us a photo album to show us which is which. BUT I think they seriously need to re-paint those photos because they all look the same since all the photo is faded out and it’s in one colour tone therefore after seeing it we gave up. 😂😂😂, we used translation app to translate. It’s better if you google it first before going. (I have upload the menu here). The soup was good but the braised pork was not the tender Type. To me I had better ones then this. When we leave there was a longer queue. Overall I don’t think it’s worth queuing in the rain to the ramen.

We arrived at around 12:15 on a Sunday. The queue was quite long, and we had to wait 1:40 hour. We were curious to find out how it is. As we got closer to the top of the line, a staff member came out to ask us to go purchase tickets for our food order. The menu was all in Japanese, but there is an image of the ticket vending machine with translation on Google map. Once we get seated. The food was ready. Excellent tonkotsu ramen. The noodle quite fine. I actually prefer firmer texture, but this is on the soft side, but still ok. The charshu is a little fatty which is fine by me. It is quite salty if you have it on its own, but ok with the soup. Overall, a very good experience. Try to avoid the weekend lunch, I guess. I see in other reviews that may suggest that line is shorter in the evening of weekdays. Mileage may vary! What I can say is that they are very efficient
