First time trying siphon coffee as a v60 daily driver coffee enthusiast. I was a bit skeptical I would get a good cup here for two reasons: Long steep time due to how the siphon process works, and Most Japanese roasters tend to roast way too dark. I've only ever had super bitter cups in Japan.
BUT, I was pleasantly surprised at the complexity of the cup I was served. The Ethiopian was sweet and juicy, with berry notes and the Papua New Guinea cup had a nice dried fruit taste. This coffee spot knows what they're doing! The roast was perfect, the brewing was perfect, everything was perfect! This is my new baseline for what to expect from Japanese coffee.
On the food side, excellent cakes and pies. Not overly sweet and absolutely delicious.
This is really the perfect spot to chill for an hour over a cup of really nice coffee and some good food.

My explanation that I was away for a toilet break when the next customer was called was dismissed; she insisted I rejoin the queue. Luckily, another couple helped explain the situation. Feeling embarrassed, she then allowed us in. This is not acceptable in a service industry and you should not take advantage of it because your customers doesn't speak the language. 6.5.2025....
