The system is: go in, buy your food ticket at the machine, if there are vacant table seats, pass your ticket to the staff and sit down; if not, go back outside and wait until called. Staff were few, but worked efficiently. Upon receiving your meal ticket, they'll ask you if you want shio or shoyu broth for your tsukemen, if you ordered tsukemen. The noodles are thick, and are on the hard side, so were therefore very chewy. If the noodles were thinner, perhaps they'd be easier to eat, but in any case, these are not the type of noodles that can be slurped down with a few chews. The dipping broth is strong. In-your-face kind of strong. The lemon juice added halfway through offered one bite of brief respite, but the novelty wore off to become just a very concentrated broth. The aji-tamago (marinated egg) was also very strongly flavored. Lemon water is self-service. The interior is no frills and minimalistic. Table and counter seats are spaced out - although there are no partitions between customers sitting at the counter - and the door was open for good...

Was going to a nearby Onsen, and wanted some noodles, this place was ranked high, and looked appetizing, so I went for it.
In terms of the vibe, it is great if you are on the younger side, the workers are also on the young side. **There was a wait, of like 30 minutes around 8PM
The food itself wasn't something that I would give highest praise of, but each thing individually was exceptional.
The noodles are thick and have a good chew.
The broth is rich, yet not too much fat to where it solidifies when cold (which is a big plus because the noodles and the meat were quite cold) It also tastes great even when cold.
The meat was nothing special, but high quality nonetheless.
The cabbage was surprisingly a very good addition.
