This udon shop delivers more than just a good meal. It offers a window into quiet, skilled craftsmanship. I was seated in front of the kitchen and had the pleasure of observing the team at work. Each cook focused intently on their task, their stations neatly arranged and purposefully separated.
The noodles are handmade on-site. The texture is exceptional: firm with a slight chew, smooth yet springy. Watching the noodle maker roll and cut the dough fresh gave me a deeper appreciation for the final product.
The woman in charge of cooking the udon handled the noodles with great care, thoroughly rinsing them in cold water after boiling to lock in the perfect texture. Another chef assembled the bowls with attention to detail, carefully preparing the toppings that went with the udon. I had the Bukkake Udon.
To the side, a sushi chef prepared saba and inari sushi. Each piece was shaped with precision, light in seasoning but full of character.
