Bishiya serves the best Tonkotsu Ramen I have ever had, and I have been to quite a few places, including Ichiran, Ippudo and Kairikiya.
They specialize in Tonkotsu (pork bone broth) ramen, which they make themselves in humongous pots directly behind the counter.
The soup is rich and creamy, with a savory flavour that could almost be described as sweet. The noodles have a very pleasant, firm texture and as opposed to many other ramen stores, they don’t serve their soup with bean sprouts as filler, but use Japanese spinach leaves instead.

The noodles are slightly thicker and chewier and the broth is definitely thicker (lard) and saltier.
