The texture of the wagyu was surprisingly tough — it didn’t have the melt-in-your-mouth quality I had expected from A5. Rather than fine marbling, the fat came in uneven chunks, which made the meat feel greasy in some bites and dry in others. It felt more like a struggle than an indulgence.
The pork slices were also quite firm and lacked tenderness, which made it difficult to enjoy them as part of a shabu experience.
