I got misled by the "all you can eat" options when searching for options, I showed up and found out it was a la cart. The restaurant felt really warm inside. The female waitress was not very hospitable, and the minute I sat down for a one seater, they brought out the grill before I even ordered. It felt like a sauna, and it seemed like it was too late to turn back. It felt like I was grilling my own face as I ate. What are they thinking? They direct me to a QR. Code to order my own food, and it was linked to the LINE app, which I dont have. I struggled for a few minutes until another waiter came to help me on his phone. He is the only reason I gave an extra star. I ordered the lemon sour thar contained more lemon than drink. And the variety of lamb, platter. The original was quite salty, and the rest was ok. There was an additional coat of 380 yen on the bill, which was the bamboo shoots that I didn't order but showed with the meat. Had I known, I would be charged. I would tell them to take it away. This restaurant was also hard to find. Strongly suggest you go try a different restaurant.

TLDR: Quality of meats was good value for money as reviewed by many others… BUT the service was unexpectedly poor. My justification for my 1-star on service based on my visit:- 1. Requested for more charcoals for the stove 3 times before staff changed the stove. Staff have acknowledged the first 2 requests but then she forgotten about it. The charcoal fire was so slow during the first 60 mins for the 90 mins time-limited “a la carte” session we ended up with rushing the grilling in the last 30 mins. The slow fire wasted the premium quality meats. 2. The cashier gave us the wrong bill to paid. After we paid and waiting for the lifts… the staff who served our table rushed out and spoke loudly at us “YOU PAID?!” I showed her our paid receipt and the cashier eventually found out she sent the wrong bill to the credit card terminal. The transaction got fixed but in the whole process there was not a single simple apology. It was such an awkward experience. Certainly not something one would expect in Japan.

<味成年大叔王醫師--札幌站前燒肉熱情天國> 原本要找的是成吉思汗燒(ジンギスカン)的餐廳,不過從藻岩山看夜景回來飯店,再打發兩名美少女用餐已經將近22:00,飯店附近的成吉思汗燒專門店都快打烊(平均營業時間22:30~23:00)。大叔和我家人妻就算加快腳步,連last order也趕不上。谷歌大神查到距離飯店僅450公尺的燒烤餐廳【大眾炭火燒肉ジンギスカン•ホルモン酒場•風土(以下簡稱“ホルモン”)】營業到23:30,Tabelog風評也還不差(3.47),看起來就是目前最好的選擇了。 由於深藏在商業大樓裡,一開始還以為走錯地方,看到樓層配置圖有【ホルモン風土】的看板才放下心。我們上2F走進店門口已經差不多22:30,再過一個小時就要打烊的時刻依然賓客滿座,從衣著服飾看來應該是工作結束後的OL和salarymen,精力旺盛,有說有笑,舉杯和勸酒聲不絕於耳。還好這裡不用預約,外場服務生美眉招呼我們並且引導入座。 距離最後點餐時間只剩下30分鐘上下,我們決定一口氣點好所有想吃的品項:肚子餓一定要有澱粉類,所以點了日昨參觀北海道大學沒吃到的「生牛肉臊飯(牛トロご飯)」,另外為我家人妻點了「牛肉片山藥泥飯(牛すきとろろ飯)」,又點了「牛壽司」。 主食之後接下來就是(亂點東西)燒肉百匯了:首先是北海道怎樣都不能錯過的「ジンギスカン(羔羊燒肉)」,除了綜合(三種盛り),還點了蔥鹽(ネギ塩)和醬漬熟成(漬け込み熟成)。既然店裡標榜A5和牛一頭買い,當然不能錯過各種內臟:「原味綜合內臟(なみじゃない白盛り)」、「牛大腸頭(カリとろホルモン)」以及「知床和牛皺胃(ギアラ)味噌漬」。 在點飲料時人妻很快就決定是可爾必思,大叔卻遇到了一些障礙,【ホルモン風土】有供應無酒精飲料,不常喝酒的大叔在離開札幌的前一晚,還是下定決心想試試看在當地廣告得撲天席地的「Sapporo Classic」啤酒風味如何。「不好意思,我們家只有Suntory喔!」外場服務生美眉帶著笑容說道。其實當下應該放棄酒精類而選擇茶飲就好,為何最後還是點了啤酒呢? 最先上桌的是主食類,在北海道的第六天晚上總算得見「生牛肉臊飯(牛トロご飯)」的尊容,內心既緊張又期待。雖然是瘦肉和肥肉交雜的生肉臊,無論口感和味道絕對不是原本預期的水餃餡,表面的結實有顆粒感,接觸到熱飯的那一側融解的脂肪包圍變軟的瘦肉,柔軟好入口又不會黏牙。建議一定要加醬油,雖然可能有人認為海苔絲就已經夠提味。兩種鹹味元素以及蔥花讓肉臊鮮而不腥,牛肉甜味升級,難怪一直是札幌許多餐廳的常駐品項。 充分享受了生牛肉臊、醬油和白飯交融的美味,接下來卻發生了事後讓我們啼笑皆非的錯誤。看到山藥泥上打一顆蛋的とろろ飯(山藥泥飯),忘記餐點全名是「牛すきとろろ飯」,就開心地把這碗月見とろろ飯吃光。帶有熱度的白飯和經過日式高湯調味涼涼的山藥泥對比鮮明,蛋黃讓整體風味更為溫潤。至於我們搞不清楚狀況,鮮度足以生食的牛肉薄切片就在稍後被我們愉快地被送上烤爐當成五秒燒吃掉了。 雖然米飯的量應該已經足夠,還是忍不住點了兩貫由薄切和牛刺身捏製的「肉壽司」,【ホルモン風土】這兩貫壽司的牛肉片看起來偏瘦,油花並不豐富,淋好醬汁還放了魚子醬,應該直接吃就好。肉質柔嫩而且越嚼越甜美,只是和我印象中的A5和牛有落差,「牛すきとろろ飯」那兩片被我們搞錯的牛肉片紋路還比較美,該不會連內場也搞錯了吧? 以主食墊了肚子之後,接下來要開始進攻各式燒肉了,首先是「なみじゃない白盛り(原味綜合內臟)」,有白盛就有"辛盛(辣味)",從其他桌的點餐看起來後者其實比較受歡迎。但大叔和人妻的口味不像在地人那麼重,而且原味才能驗證鮮度。 根據粗淺的動物解剖學知識,依稀辨識出有大腸、牛百葉(蜂巢胃)、心管(主動脈)和橫膈膜等等,據說在不同的營業日各部位會隨機出餐。雖然在家時燒烤料理通常是大叔調理,這次就讓我家人妻服侍吧!不愧是巧手廚娘,即使是不常料理的燒肉火候掌控也非常精準。 大腸軟中帶Q,牛百葉表面脆裡面有咬勁,心管薄而脆,橫膈膜則是乍看精瘦,其實柔軟而且Q彈。和冷凍肉相比,冷藏肉烤好之後就是有更明顯的肉香,而且甜度也更高。雖然這一盤份量不多,視覺和口感豐富多變,可以理解喜歡杯中物的食客一定會來大杯啤酒佐餐。烤人妻......不對,有人妻服侍的燒肉就是特別美味! 用綜合牛內臟開胃後,開始想吃肉了,於是進攻「ジンギスカン(羔羊燒肉)」,先吃風味相對淡雅的「ネギ塩(蔥鹽)」。據說北海道的羊肉鮮度很好,不必烤到全熟,我們大概七八分就將肉移開烤網,並且放上店家自製蔥鹽。產地的羊肉品質果然沒話說,肉質很軟,嚼個幾下就能輕鬆吞下肚。我們當然不會如此粗魯地對待羔羊肉,而是在齒間細細品味,多汁而且越嚼羊肉的鮮甜滿溢,完全沒有羶味。 接下來因為要專心吃,就不特別拍肉品烤好後的模樣。「ジンギスカン3種盛り」顧名思義就是三種風味,很適合第一次造訪的客人。我們選擇的是原味、醃漬熟成以及黑鹽,對於羔羊肉的品質比較有信心後,我們在熟度上更為放縱,講白一點就是外熟內生的五分狀態。我們曾用原味羊肉沾店家附上的三種沾醬,可惜並沒有加分效果。黑鹽比一般的鹽風味更加高雅而且豐富,醃漬熟成口味比較重,甚至掩蓋了羔羊肉的自然鮮味,但是賦予不一樣的味覺生命,同樣值得一試。 點餐的時候沒特別注意,後來才知道這是店裡最有人氣的一品--「カリとろホルモン(大腸頭;直腸)」,很多部落客都寫成大腸,個人覺得不夠精確。因為任何切片上都看不到大腸獨有的結腸袋(haustration),所以應該是大腸的最後一段,在乙狀結腸之後的直腸,一隻牛只得30公分,算是珍稀部位。(我家人妻:「吃個燒肉別研究解剖學好嗎?專心吃!」)稍經調味的大腸頭燒烤後有著淡淡的油脂香氣,和牛雜拼盤的大腸相比沒那麼柔軟,經得起咀嚼,也比較沒那麼油膩,風味偏清爽。 最後一品是用味噌醃漬的「知床和牛ギアラ」,為了研究"ギアラ"是什麼,還得查閱資料,得知是牛的第四個胃--皺胃。和比較常見的牛百葉(牛的第三個胃--蜂巢胃)相較,夾起來的手感明顯地柔軟許多,看起來平滑肌的百分比較高(我家人妻:「請專心吃,好嗎?」)。味噌的存在應該是為了遮掩內臟特有的氣味,鹹度高,口味也比較重,但因為皺胃有一定的厚度,還在可以接受的範圍,Q彈不硬的肉質以及有深度的風味也為這一餐畫下美好的句點。 我們這樣大吃大喝了一頓,餐費折合新台幣約2000上下,以如此價格可以享受優質的北海道道產的優質肉品,堪稱物美價廉。即使店家附上的三種沾醬並不能凸顯肉品的優點,也瑕不掩瑜。原本還以為自己發掘了一家口袋名單等級的好店,回國後查閱資料才發現,原來已經有不少台灣部落客造訪過,雖然各有所好,對於整體的品質讚譽是一致的,看起來英雄所見略同呢! After we paid and waiting for the lifts… the staff who served our table rushed out and spoke loudly at us “YOU PAID?!” I showed her our paid receipt and the cashier eventually found out she sent the wrong bill to the credit card terminal. The transaction got fixed but in the whole process there was not a single simple apology. It was such an awkward experience. Certainly not something one would expect in Japan.

<味成年大叔王醫師--札幌站前燒肉熱情天國> 原本要找的是成吉思汗燒(ジンギスカン)的餐廳,不過從藻岩山看夜景回來飯店,再打發兩名美少女用餐已經將近22:00,飯店附近的成吉思汗燒專門店都快打烊(平均營業時間22:30~23:00)。大叔和我家人妻就算加快腳步,連last order也趕不上。谷歌大神查到距離飯店僅450公尺的燒烤餐廳【大眾炭火燒肉ジンギスカン•ホルモン酒場•風土(以下簡稱“ホルモン”)】營業到23:30,Tabelog風評也還不差(3.47),看起來就是目前最好的選擇了。 由於深藏在商業大樓裡,一開始還以為走錯地方,看到樓層配置圖有【ホルモン風土】的看板才放下心。我們上2F走進店門口已經差不多22:30,再過一個小時就要打烊的時刻依然賓客滿座,從衣著服飾看來應該是工作結束後的OL和salarymen,精力旺盛,有說有笑,舉杯和勸酒聲不絕於耳。還好這裡不用預約,外場服務生美眉招呼我們並且引導入座。 距離最後點餐時間只剩下30分鐘上下,我們決定一口氣點好所有想吃的品項:肚子餓一定要有澱粉類,所以點了日昨參觀北海道大學沒吃到的「生牛肉臊飯(牛トロご飯)」,另外為我家人妻點了「牛肉片山藥泥飯(牛すきとろろ飯)」,又點了「牛壽司」。 主食之後接下來就是(亂點東西)燒肉百匯了:首先是北海道怎樣都不能錯過的「ジンギスカン(羔羊燒肉)」,除了綜合(三種盛り),還點了蔥鹽(ネギ塩)和醬漬熟成(漬け込み熟成)。既然店裡標榜A5和牛一頭買い,當然不能錯過各種內臟:「原味綜合內臟(なみじゃない白盛り)」、「牛大腸頭(カリとろホルモン)」以及「知床和牛皺胃(ギアラ)味噌漬」。 在點飲料時人妻很快就決定是可爾必思,大叔卻遇到了一些障礙,【ホルモン風土】有供應無酒精飲料,不常喝酒的大叔在離開札幌的前一晚,還是下定決心想試試看在當地廣告得撲天席地的「Sapporo Classic」啤酒風味如何。「不好意思,我們家只有Suntory喔!」外場服務生美眉帶著笑容說道。其實當下應該放棄酒精類而選擇茶飲就好,為何最後還是點了啤酒呢? 最先上桌的是主食類,在北海道的第六天晚上總算得見「生牛肉臊飯(牛トロご飯)」的尊容,內心既緊張又期待。雖然是瘦肉和肥肉交雜的生肉臊,無論口感和味道絕對不是原本預期的水餃餡,表面的結實有顆粒感,接觸到熱飯的那一側融解的脂肪包圍變軟的瘦肉,柔軟好入口又不會黏牙。建議一定要加醬油,雖然可能有人認為海苔絲就已經夠提味。兩種鹹味元素以及蔥花讓肉臊鮮而不腥,牛肉甜味升級,難怪一直是札幌許多餐廳的常駐品項。 充分享受了生牛肉臊、醬油和白飯交融的美味,接下來卻發生了事後讓我們啼笑皆非的錯誤。看到山藥泥上打一顆蛋的とろろ飯(山藥泥飯),忘記餐點全名是「牛すきとろろ飯」,就開心地把這碗月見とろろ飯吃光。帶有熱度的白飯和經過日式高湯調味涼涼的山藥泥對比鮮明,蛋黃讓整體風味更為溫潤。至於我們搞不清楚狀況,鮮度足以生食的牛肉薄切片就在稍後被我們愉快地被送上烤爐當成五秒燒吃掉了。 雖然米飯的量應該已經足夠,還是忍不住點了兩貫由薄切和牛刺身捏製的「肉壽司」,【ホルモン風土】這兩貫壽司的牛肉片看起來偏瘦,油花並不豐富,淋好醬汁還放了魚子醬,應該直接吃就好。肉質柔嫩而且越嚼越甜美,只是和我印象中的A5和牛有落差,「牛すきとろろ飯」那兩片被我們搞錯的牛肉片紋路還比較美,該不會連內場也搞錯了吧? 以主食墊了肚子之後,接下來要開始進攻各式燒肉了,首先是「なみじゃない白盛り(原味綜合內臟)」,有白盛就有"辛盛(辣味)",從其他桌的點餐看起來後者其實比較受歡迎。但大叔和人妻的口味不像在地人那麼重,而且原味才能驗證鮮度。 根據粗淺的動物解剖學知識,依稀辨識出有大腸、牛百葉(蜂巢胃)、心管(主動脈)和橫膈膜等等,據說在不同的營業日各部位會隨機出餐。雖然在家時燒烤料理通常是大叔調理,這次就讓我家人妻服侍吧!不愧是巧手廚娘,即使是不常料理的燒肉火候掌控也非常精準。 大腸軟中帶Q,牛百葉表面脆裡面有咬勁,心管薄而脆,橫膈膜則是乍看精瘦,其實柔軟而且Q彈。和冷凍肉相比,冷藏肉烤好之後就是有更明顯的肉香,而且甜度也更高。雖然這一盤份量不多,視覺和口感豐富多變,可以理解喜歡杯中物的食客一定會來大杯啤酒佐餐。烤人妻......不對,有人妻服侍的燒肉就是特別美味! 用綜合牛內臟開胃後,開始想吃肉了,於是進攻「ジンギスカン(羔羊燒肉)」,先吃風味相對淡雅的「ネギ塩(蔥鹽)」。據說北海道的羊肉鮮度很好,不必烤到全熟,我們大概七八分就將肉移開烤網,並且放上店家自製蔥鹽。產地的羊肉品質果然沒話說,肉質很軟,嚼個幾下就能輕鬆吞下肚。我們當然不會如此粗魯地對待羔羊肉,而是在齒間細細品味,多汁而且越嚼羊肉的鮮甜滿溢,完全沒有羶味。 接下來因為要專心吃,就不特別拍肉品烤好後的模樣。「ジンギスカン3種盛り」顧名思義就是三種風味,很適合第一次造訪的客人。我們選擇的是原味、醃漬熟成以及黑鹽,對於羔羊肉的品質比較有信心後,我們在熟度上更為放縱,講白一點就是外熟內生的五分狀態。我們曾用原味羊肉沾店家附上的三種沾醬,可惜並沒有加分效果。黑鹽比一般的鹽風味更加高雅而且豐富,醃漬熟成口味比較重,甚至掩蓋了羔羊肉的自然鮮味,但是賦予不一樣的味覺生命,同樣值得一試。 點餐的時候沒特別注意,後來才知道這是店裡最有人氣的一品--「カリとろホルモン(大腸頭;直腸)」,很多部落客都寫成大腸,個人覺得不夠精確。因為任何切片上都看不到大腸獨有的結腸袋(haustration),所以應該是大腸的最後一段,在乙狀結腸之後的直腸,一隻牛只得30公分,算是珍稀部位。(我家人妻:「吃個燒肉別研究解剖學好嗎?專心吃!」)稍經調味的大腸頭燒烤後有著淡淡的油脂香氣,和牛雜拼盤的大腸相比沒那麼柔軟,經得起咀嚼,也比較沒那麼油膩,風味偏清爽。 最後一品是用味噌醃漬的「知床和牛ギアラ」,為了研究"ギアラ"是什麼,還得查閱資料,得知是牛的第四個胃--皺胃。和比較常見的牛百葉(牛的第三個胃--蜂巢胃)相較,夾起來的手感明顯地柔軟許多,看起來平滑肌的百分比較高(我家人妻:「請專心吃,好嗎?」)。味噌的存在應該是為了遮掩內臟特有的氣味,鹹度高,口味也比較重,但因為皺胃有一定的厚度,還在可以接受的範圍,Q彈不硬的肉質以及有深度的風味也為這一餐畫下美好的句點。 我們這樣大吃大喝了一頓,餐費折合新台幣約2000上下,以如此價格可以享受優質的北海道道產的優質肉品,堪稱物美價廉。即使店家附上的三種沾醬並不能凸顯肉品的優點,也瑕不掩瑜。原本還以為自己發掘了一家口袋名單等級的好店,回國後查閱資料才發現,原來已經有不少台灣部落客造訪過,雖然各有所好,對於整體的品質讚譽是一致的,看起來英雄所見略同呢! I got misled by the "all you can eat" options when searching for options, I showed up and found out it was a la cart. The restaurant felt really warm inside. The female waitress was not very hospitable, and the minute I sat down for a one seater, they brought out the grill before I even ordered. It felt like a sauna, and it seemed like it was too late to turn back. It felt like I was grilling my own face as I ate. What are they thinking?

They direct me to a QR. Code to order my own food, and it was linked to the LINE app, which I dont have. I struggled for a few minutes until another waiter came to help me on his phone. He is the only reason I gave an extra star.

I ordered the lemon sour thar contained more lemon than drink. And the variety of lamb, platter. The original was quite salty, and the rest was ok. There was an additional coat of 380 yen on the bill, which was the bamboo shoots that I didn't order but showed with the meat. Had I known, I would be charged. I would tell them to take it away.

TLDR: Quality of meats was good value for money as reviewed by many others… BUT the service was unexpectedly poor.

My justification for my 1-star on service based on my visit:- Requested for more charcoals for the stove 3 times before staff changed the stove. Staff have acknowledged the first 2 requests but then she forgotten about it. The charcoal fire was so slow during the first 60 mins for the 90 mins time-limited “a la carte” session we ended up with rushing the grilling in the last 30 mins.
