Nice bowls of ramen. Light and subtle flavors. Simple menu. We got both bowls—the Takayama ramen had thinner noodles and a broth with a stronger dashi flavor. Both had just the right amount of sodium! I can’t say which one I liked better, but slightly prefer the noodles in the Takayama; they were thinner, curly, and had a nice bite to it. Try both ramen with a little bit of white pepper, it really brings out the flavor.
The pork in the Takayama and the chicken in the shoyu were both cooked perfectly. Tender, but not too meaty/gamey.

The noodles are thicker and don’t absorb the broth as much. Takayama is a lighter broth with lighter curly noodles that absorb the broth flavors. I prefer the latter.
