I used to love bread from Paul when I lived in Tokyo. I used to buy it in Shibuya and Jiyugaoka, and it was always excellent, so when I noticed they have a shop in Haneda I was determined to get some great fresh bread to take home. First of all, the service was so slow - they had to process each contactless payment individually, and even though there were only a few people waiting in line, it must’ve taken about 15 minutes to just buy some bread! Not good when you’re worrying about your departure time. But the biggest disappointment was when I got home. Despite paying about ¥700 for a kind of long boule, when I got to try it at home a couple of hours later it was clearly stale. It kind of tasted like bread made with a levain, and the structure was very good ( I bake sourdough myself), but it has this kind of smell as if it had been frozen part-baked, then reheated. More like something you might buy at Costco, or maybe at a breakfast buffet in a chain hotel than professionally-made “ Artisan bread”..
