A traditional French pastry, tarte citron is a a classic tart with lemon cream and meringue topping. The sweetness of the meringue softens the acidity of the lemon and is a simple but delicious combination. ð«ð·
Being a chocolaterie, Presquile have replaced the meringue with a chantilly white chocolate ganache which is flavoured with vanilla and rum. ðšð¹
This ganache is a light, fluffy, milky mousses which melts in the mouth, and is excellent. The lemon cream is not super sour, more rich and smooth, making it easy to eat for all people. ð¥°
The tart pastry base adds a nice solid crunch and completes what is a sophisticated and well executed creation. ð
Personally I would have preferred a stronger lemon punch with more zest, but I feel that this more balanced profile fits the image of Presquile better. ððŒ
If you are a fan of lemon tarts with a twist, then this one is highly recommended! ððŒ
