Well, another nice well made bowl of ramen, I had. These top of the class ramen restaurant really thought out how to create their own unique taste. It is easy to think that miso, shio, shoyu and donkotsu ramen will taste same but best ones do have their own recipe to distinguish themselves from the rest. This particular place has strong seafood flavor from either fish sauce or anchovy broth with aroma that might not pleasant to certain people. The aroma is like ones from seasoned and fermented such as natto, dark misso or nigori sake. As a matter of fact, this broth has almost no fat floating on. Very noticeable. I wish they put more negi to balance out the aroma/taste. Chasu was excellent and so as noodles. The chef dipped a whole bunch of noodles into boiling water unlike other shop that separates from each other with its own small colander. Various toys and artifacts at the shop don't bore you once you get inside. Another unique aspect of the store is that there are two tables; one for two and another one for four people. Access is an issue if you want to visit. Train stations are a bit far but paid parking lots are around. If you have something to buy at Conan, home improvement store. Read moreThe ramen is near the top of its class for gyokai tonkotsu. The broth was very aromatic and there was a intense amount of flavor per volume. The noodles were slightly thicker than usual which went perfectly with the somewhat thicker soup. This is the kind of ramen I could eat three times a week.
I was most surprised at the great service and humble atmosphere despite being considered an elite shop. Despite always having a sizable queue in their limited open hours, they still make an effort to apologize for it and even added the "thank you for waiting in the cold" which was an added touch. Many ramen shops presume a more haughty attitude but even the starting price of 650 yen for ramen shows that they have kept both feet on the ground. Read moreI visited Koukaibou Ramen today to sample the recommended ramen fare. I was very pleased with the visit both from a food aspect and from their pleasant hospitality. The ramen master carefully prepares each order and his wife serves, clears and settles the check at the end of the meal. The wife speaks English and presents and explains menus while you are waiting to be seated. All very polite service and well done. The ramen soup was perfectly balanced of a meat based broth and just enough of dried anchovy ( I’m guessing) which gives it a pleasant smoky flavor. The hand cut chashu is cooked just right and tender. I recomend adding the optional egg which was perfectly cooked and seasoned. Located an easy walk...
