🍜 特製鶏そば / tokusei tori soba 🇯🇵 らぁ麺やまぐち / ramen yamaguchi / nishi-waseda, tokyo 🗓️ 07/21/2024

(@wei.oframen on ig for my ramen adventure 😚)

I'm still on my side quest to clear the past and current Bib Gourmands 🫡 Yamaguchi is a shop that still sits quite high on Japanese gourmet sites despite the fact that it already fell out of the Michelin guide. After the first sip of the soup, it was quite clear to me how it maintained a great score on Japanese rankings. The broth was delicious. It was lighter than some of the 100% chicken ramen I got recently, but the flavors were delicate and memorable. The noodle pairing was also on point. The tokusei came with an array of toppings that are pretty standard for a bowl of this style nowadays. Each of the toppings played their role well in the bowl, so nothing to complain...

This place was in the Michelin guide book 2015/2016 So my hopes were high for a delicate balance, and it delivered If you like a good balance of flavors, I do recommend this placez but if you're looking for a strong flavor, there are other places I would go to.

Unlike most places that offer Tsukemen(dipping noodles) this place gives you the noodles in water, I'm assuming do the noodles don't clump together

The soup was nice and well balanced, a different flavor than any other place I've been It also had wontons and a flavored egg(very nice deep red yolks)

The noodles had a nice consistency, I'm also assuming made specifically for them

I would recommend to people looking for a more high end ramen experience at a...

There’s always a queue in front of this ramen shop during lunch hours, and after finally trying it on a weekday night to avoid the crowd, I totally understand why. For around 1400 yen you get the most popular ramen option, which comes with pork, chicken, wontons, and an egg. No need to order extra toppings, and extremely filling and tasty. You can’t customize the texture of the noodles, but it doesn’t matter because they are cooked to silky perfection; in fact, I would say that in terms of the texture of noodles, this is my favorite ramen place ever. Btw, the atmosphere is actually pretty classy for a ramen shop (partially due to the jazz music being played). Looking forward to trying the...
