I was really looking forward to this place after seeing so many positive reviews on social media, but unfortunately, I was disappointed. The service was excellent, and the chef was kind — the ambiance was also lovely. However, the sushi itself didn’t taste fresh.

I had made a reservation in advance and brought my boyfriend’s parents here, hoping for a special omakase experience. While the overall experience was fine, the fish was way too fishy for the price we paid… 너무 비렸어요 ㅠㅠ. We ended up spending nearly 800,000 KRW (over $500 USD), and I expected much better quality at that price point.

To be fair, we were about 25 minutes late to our reservation, so I’m not sure if that affected the freshness — maybe the fish had been sitting out? the dessert at the end was honestly the highlight of the meal..

I’m being generous with my rating because the staff was genuinely kind and there were a few dishes that stood out as quite good. However, the overall experience didn’t meet expectations, and the rest of my group said they would rate it just 1 star. Unfortunately, it just didn’t live up to the...

Hands down one of the best omakase experience. Speaking from a person who had travel to Japan the 3rd time this year, and probably my 5th omakase this year, this place is a gem!

We were a bit skeptical when we arrived because there were literally no one dining the same time as us, and we were mostly afraid because the chefs we had in other restaurants are not super friendly towards foreigners. But this place changes our perception!

The chef is truly engaging, friendly and when they heard my partner and I got engaged recently in Mt Fuji, he was genuinely happy for us and had even cheered us with a free shot! Food was truly impeccable, with no dishes that we thought was like ok we can pass on that! Btw the deep fried cod sperm has the best texture, he really knows how to elevate each ingredient. He made sure we understood what we were eating even with his limited English which was reassuring.

和食と超有名寿司屋さんのDNAを受け継ぎ、ソムリエでもある大将による極上のペアリングコース。恵比寿の客足の流れが変わる予感です。

4月に「これぞ恵比寿」というハイセンスかつハイコスパな寿司屋さん「恵比寿 鮨 はつめ」に訪問して衝撃を受けましたが、同じビルで新店を出したということで、早速訪問してきました。

「恵比寿 鮨 はつめ」はコース料金約1万円、ペアリングで1万円台後半という絶妙な価格設定でした。

今回の「恵比寿 鮨 謙心」で2万円弱、ペアリングで2万円台後半という、価格帯を上げてより上位の層をターゲットとしたお店。

予約の時間にお店に訪問すると、開店祝いのお花が多数。中には銀座の超有名寿司屋さんの名前が。

また、大将の小嶋 龍平氏は和食の修行をベースに、渋谷の超実力派寿司屋さんの個室担当をされていました。こちらは昨年末にボクも訪問したことがありますが、洗練された素晴らしいお店でした。

寿司を食べる前から「美味しい!」と言ってしまいそうな期待値を感じさせてくれます。

中に入り、カウンターへ。ちなみに、「恵比寿 鮨 はつめ」と「恵比寿 鮨 謙心」は同じビル、かつ同じ階、しかも中で繋がっています。

大将の小嶋さんは健康的に日焼けしていて見るからにエネルギッシュ。気持ちの良い挨拶交わすと、後ろから「鮨 はつめ」の本村大将が挨拶に顔を見せてくれました。

店舗がつながっていることでできる気遣いですが、ほんの1分程度の挨拶でも嬉しいものですね。

この日はペアリングにしようと思ったのですが、外が暑かったのでまずはエビスビールを流し込みたかったので、最初の1杯はビールを。

大将はワインのペアリングをオススメしてきますが、それもそのはず。ソムリエの資格を持つ大将だからです。

そこで最初のビールを一気に飲み干し、次から料理に合わせてペアリングでお酒を提供していただくうよう伝えます。

この日のコースは以下の通り。

八寸 すいとろ・・・とろろ芋をおろしたものを出汁でのばし、秋田のじゅんさいと雲丹を入れたもの。優しく香り良く美味しい。 鱧・・・湯引いた天草のハモに梅肉醤油をかけたもの。 タコの桜煮・・・旨みが染みた明石のタコ、噛みごたえを残し咀嚼するごとに美味い味が広がります。 ホワイトアスパラのおひたし・・・干し海老の出汁で炊いたお浸し。 蟹ととうもろこしの酢の物・・・毛蟹の美味さ爆発の一品、美味い!

鰹・・・焼きを入れたカツオが香り良く、上に乗せた黄ニラが美味い。ペアリングは赤ワインのMoulin à Vent Les Trois Roches 2021

鮎の天ぷら・・・氷でしめて生きたまま揚げたアユ。油の中で泳いでいた姿で固まるので、動きがあるフォルム。お皿がレコードのように溝があるデザインです。 身の美味しさと腑の苦味、添えられたアボカドが表面の衣の食感と中のトロっとした柔らかさのコントラストが絶妙です。 ペアリングは日本酒のKURAMOTO、ワインと間違うような清々しい美味しさ。驚きました。と言っていたら、これに近い白ワインも出してくれました。自然なサービスが素晴らしくて笑ってしまいます。

太刀魚の小丼・・・焼きを入れたタチウオの脂が下のシャリに落ちて、極上の一品になります。素晴らしく美味しいです。

真鯛・・・タイは種類が多いですが、淡白な噛みごたえのある白身は上品な旨みがあり大好きです。

スミイカ・・・表層の歯触りと歯が抜けたあとのねっとりした柔らかさ、甘味ある旨み、最高です。

帆立・・・ホタテの表面を焼いて、昆布出汁に入れた後、詰めた出汁に崩したホタテを1晩漬け込んだもの。このフォルムは大将が以前いた渋谷のお店に近く、大将独自のアレンジを加えています。 凝縮された旨みが最高、凄まじく美味しい。 ここまでのペアリングは白ワインInazio URRUZOLA。

鯵・・・島根の「どんちっちアジ」、“アジの大トロ“とも言われる絶品アジですが、この日のアジは特に良いものでした。 普段寿司屋さんで食べるアジももちろん美味しいものですが、このアジは別格。口に入れた瞬間の旨みセンサーの針の振れ方がバグってました。

小鰭・・・酢と塩でしめたコハダ、確かな技術の結晶の1貫です。 ここまでのペアリングは白ワインVIÑAS VELLAS。ソムリエの資格を持ち、自らもお酒が大好きな小嶋大将のチョイスは抜群の信頼感です。

赤身・・・島根県巻網でとれた本鮪、真紅美しさに目を奪われます。旨みと酸味のバランス、質の高いマグロですね。

中トロ・・・脂の乗りと甘味と旨み、シャリとのバランスが完璧です。言葉のいらない美味しさです。 ペアリングは赤ワインGANYMED SPAT BVROVNDER PINOT NOIR。

甘鯛・・・脂乗りが良く淡白な味わいの中に感じる旨みと甘味、そして香り。うんまいです。

車海老・・・半生の絶妙な火入れで茹で上げたクルマエビ。口に入れて噛むと広がる甘味と旨み。 ペアリングのVIOGNIER Collines Rhodaniennesも名アシストを演じています。

鰻・・・寿司屋さんでウナギは久しく遭遇していないですが、アナゴではなくウナギの登場。香り高い海苔でウナギを乗せたシャリ、その間に奈良漬けをはさんだ一品。 やはりウナギはアナゴとは似て非なるもの、一味も二味も違います。口福です。

雲丹・・・北海道の綺麗にそろった色も形も良いウニ。軍艦に乗せた、極上のウニの美味しさの記憶は強烈に脳に刻み込まれます。 ここまでのペアリングはMakai Merlot。

赤だし

甘味・・・ギリギリ最後のシーズンの苺を使ったスイーツ。甘い苺のミニパフェが口の中をサッパリとしてくれて、後味よく食事を終わらせてくれます。

全体として、お店に行く前から美味しいのが分かってはいましたが、実食してみて予想を上回るクオリティでした。

ネタの良さ、大将の技術に加えて適切なペアリングのチョイス、お店の雰囲気の良さやカウンター下に電源をつけてくれている配慮、ホスピタリティと、すべてがハイレベル。

I had made a reservation in advance and brought my boyfriend’s parents here, hoping for a special omakase experience. While the overall experience was fine, the fish was way too fishy for the price we paid… 너무 비렸어요 ㅠㅠ. We ended up spending nearly 800,000 KRW (over $500 USD), and I expected much better quality at that price point. To be fair, we were about 25 minutes late to our reservation, so I’m not sure if that affected the freshness — maybe the fish had been sitting out? the dessert at the end was honestly the highlight of the meal.. I’m being generous with my rating because the staff was genuinely kind and there were a few dishes that stood out as quite good. However, the overall experience didn’t meet expectations, and the rest of my group said they would rate it just 1 star. Unfortunately, it just didn’t live up to the hype for us.

Hands down one of the best omakase experience. Speaking from a person who had travel to Japan the 3rd time this year, and probably my 5th omakase this year, this place is a gem! We were a bit skeptical when we arrived because there were literally no one dining the same time as us, and we were mostly afraid because the chefs we had in other restaurants are not super friendly towards foreigners. But this place changes our perception! The chef is truly engaging, friendly and when they heard my partner and I got engaged recently in Mt Fuji, he was genuinely happy for us and had even cheered us with a free shot! Food was truly impeccable, with no dishes that we thought was like ok we can pass on that! Btw the deep fried cod sperm has the best texture, he really knows how to elevate each ingredient. He made sure we understood what we were eating even with his limited English which was reassuring. Don’t be afraid to talk to the chef and the lovely waitress.
