The food and drinks were amazing, but the service was just not good. Left the restaurant feeling unpleasant. I never write reviews, but it was so bad and I thought I would share it.
First, my friend made a reservation for us a few days prior, we showed up on time, and we were told that they didn’t have our name. Luckily there was a table available and didn’t have to wait at all.
As soon as seated, the server started to explain how to order their speciality foods. She went too fast and we weren’t ready to listen yet. We missed the most of it. (We asked again to make sure when we placed an order)
After ordering our foods and drinks, we asked for water but they forgot to bring, so we asked again. I ordered a bowl of rice and they forgot. I asked for a rice refill, and again they forgot. We wanted our jackets back because we were cold and guess what? They forgot. The amount of times we had to ask twice was insane. Before we ask for the second time we waited for 10 - 30 minutes each time since we tried to be patient, but it seemed they genuinely forget every time. I understand people forget and I usually am a happy customer, but it was just RIDICULOUS. The place wasn’t that busy.
Only time they didn’t forget what we asked was the check. It came right away and the transaction finished quickly. We were getting ready to leave, and then a server who didn’t take care of our check came rushing towards us, and asked if we paid the bill. The way she approached us and asked us assuming we tried to leave before paying was very rude. She probably could have checked if the bill was paid in the back. Or phrased it differently and apologized but she just left after we told her we had already paid.
Again, the food was AMAZING. The location is good too. I just wish the servers were more trained. I know it’s not a five star restaurant and I’m not asking for the best services ever. It was just very bad. Located in the middle of Marunouchi and foods priced semi expensive, I expect better service than that. I've enjoyed the set dinner menu on two occasions. Each dish surprises the eyes with imaginative flare and excites the palate, too. Some dishes lean more toward Chinese (the signature boiled chicken in a red broth of chile and Chinese spice), while others lean Spanish (gazpacho or paella). The most succulent lamb chops I have ever had combined elements of both, seeming to have been roasted (but remaining rare) in a mound of dried red chillies. The wine menu is excellent as well. So many fine dining establishments in Tokyo have extensive wine lists but serve supermarket plonk by-the-glass. At TexturA, the pairing menu was as impressive and wide-ranging as the food. Generous, too! It included small pours of a few Chinese rice wines, a Chinese "orange" Sauvignon Blanc, a light Japanese sake, a Spanish cidre, and a robust Ribera del Duero. At one point, the waiter said he couldn't decide between an oloroso sherry and an albariño, so he served both! ビンチョス: 産地や食材に拘っている様子はない。連れのお皿と自分のお皿を比べてみましたがお皿によって大きさや形が不均一で雑な仕事だと印象を受けました。
よだれ鶏を三段活用: こちらの三段活用は笑えました。一段目、鶏を浸しているタレ汁ですが様々な味がしますが特筆すべき味ではない。鶏に関してはボイルした鶏のスライス。鶏自体に汁が染みている訳でもなく物足りない。2段目、驚いたことにその残ったタレ汁に焼き餃子を付けて食する。高級を売りにしている店舗で残ったタレ汁で焼き餃子とは…悲しくなります。3段目、山椒に練り込んだ麺を更に残った汁で食する。このタイミングで麺出てきた!と首をかしげる。最後に更に残ったタレ汁に豆乳を投入し合わせて飲むという、なんだか気持ち悪い。百歩譲って各食材からだしが出て回を重ねるごとに深味を増すとかだったら分かりますよ。しかし前の食材からダシなど出ません。残り汁を上手いことやったみたいに演出しているだけとしか思えません。仮にそこまでこのタレ汁を推すのであればその都度、新しいタレ汁を提供するほうがスマートで気持ち良いです。
カツオ: ただのカツオたたきのサラダ仕立て。藁などの香ばしい薫りもひねりも一切なし。
?: 最高に笑えます。中身の見えない3つの袋とじになった食材を客に選択させ開封しその食材を使用した料理を提供するという演出。私はカラスミを選択しました。ほう、どのようなカラスミのお料理が味わえるのか淡い期待をしておりました。…が見事に裏切られました。バジル風味の米麹に先ほど選択したカラスミをおろし金でパラパラと微少にかけるだけ。驚いたことに…仰々しい演出で選択させられた食材はメインの食材に使用される食材と誰もが勘違いしませんか?しかも袋から開封したカラスミ現物ではなく他に用意された使い回しのカラスミ…そのカラスミを微少に振り掛けるだけとは…この辺で相当呆れてしまっております。
白金豚: 冷製の豚スライスに柚胡椒や味噌的な薬味を少々のせて食する。味は特筆すべきことはない。正直旨くもなんともない。中華料理とスペイン料理の融合なのだから中華の強火力で調理された熱々のメインディッシュをいただきたいっ!と心の中で叫んでいました。
ネギそば: 自分の舌がバカなのか拒絶反応なのか分かりませんが即席麺にネギオンリーとしか表現できません。
