This lounge bar is quite the find, even in a Tokyo district famed for its nightlife. The bar is a little hard to find, but with closer inspection you'll see that the logo hung on the side of the wall of a building spells out "THESE." Upon opening the door, we were greeted by a very smartly dressed and very well-spoken gentleman who turned out to also be our server for the evening. Between him and the bartender (we'll get to that later), the two were attending to guests non-stop and all the while keeping their cheerful and professional disposition.
After being seated at the bar, with a perfect view of all the drinks being made that evening, we were presented with the food menu and drinks "menu." The food menu contained some comfortably familiar, but wonderfully different bar foods such as meatballs, chicken wings, fries, and other small bites. Familiar yet different in that you've had these foods before, but not seasoned and prepared the way THESE has done it, and the results are very unique and utterly delicious. Getting back to the drinks menu, it is actually a basket of imitation fruit and herbs, which you visually pick which type of cocktail you would like, and our server would then recommend the type of liquor and possible secondary flavor to pair with. For example, selecting basil might get paired with lemongrass or ginger, and with gin or rum as the liquor. Then it was up to the bartender to prepare the full cocktail.
And prepare he did, with flair and "feeling" as Uncle Roger might say. Instead of using measuring tools and proper bar equipment, he would simple crush some ice by hand, then pour an "adequate" amount of fruit juice, herbs, and liquors and finish the drink off with some appropriate garnish. The results were fantastic, as show in my attached photos.
The bar itself is decorated somewhat quixotically, partially like a library, and partially as an eccentric explorer's lounge. Everything about the place reminds you of something you've probably seen in the movies yet the overall combination was something unique that you can't quite put your finger on. When I said I’d be happy to wait, he brushed me off with a vague “it might take over an hour” excuse. • Moments later, a Western man walked in alone and asked if there was a table for two. The same staff member immediately started looking for a table for him.
I was so taken aback that I asked, “Why was I turned away, but not him?” The staff member completely fumbled — no real explanation, just incoherent mumbling and deflection.
(1) He had no idea if I was going to order one drink or five. (2) It wasn’t about taking up a large table — if there was a two-top, there’s no reason a solo diner couldn’t be seated. (3) And this happened in Roppongi? Even if his English isn’t perfect, this kind of clumsy, dismissive service is beyond unprofessional.
To be absolutely clear: • I was dressed appropriately for the setting. • I’m a professional woman dining alone. • Even the man who arrived after me was visibly confused by what happened and said I was welcome to join his table if that would somehow make a difference.
That this kind of obvious discrimination still exists in Tokyo in 2025 is just sad.

Once you arrive they will bring you the “fruit bowl” from which they will explain you the available fruit. Once you chose it the staff will recommend you which other ingredient to pair it with. If you’re happy with their proposition, then they will bring you within 10 min, with some popcorn to nibble on.
The lounge is VERY DARK except table light to see the cocktail.
The only missing point is that they don’t explain to you the price of the cocktail…😣 So I guess it depends on the fruit price but I would be nice to know to avoid bad surprises at the end. We paid ¥7800 for 2 cocktails only so I would say pretty pricy. I don’t know if it includes a table char or not as no explanation…
We paid at the entrance on our way back but it would be nice to have a bit more presence of staffs around to ask if any questions.

It’s open until 3am. Closest station is Omotesando or Hiroo for about 15 min walk. Easier to go by taxi...
