Agesuma has run a variety of businesses since the Edo period, including transportation and an inn, and in 1922 (Taisho 11), it opened Yamagata's first restaurant specializing in eel and river fish dishes. Shiga Naoya once visited, and poet Saito Mokichi also wrote in his diary about eating Agetsuma's eel, so many great writers have also enjoyed the restaurant's eel dishes. At the restaurant, charcoal is lit early in the morning and the eels swimming in the fish tank are butchered. As much as possible, local ingredients are used, and all seasonings and other ingredients are made by people whose faces are visible to the eye. Agesuma has long been committed to valuing the things that cannot be seen. Based on the teaching that a restaurant will prosper if the river is kept clean, the restaurant respects long-standing traditions, such as cleaning the water flow of the nearby Gotenzeki Weir and making daily visits to Shoichii Fujikane Inari Okami, who has been worshiped as the family deity for generations.
