This is the most Excellent BKT (& probably the best Bak Kut Teh) among many Good & Mediocre BKTs in the heart of Klang, origin place of the dish. Why Excellent? Expect detailed small points that the owner put 30 years of time and effort into making their's version outstanding.
We ordered 1 dry BKT, 2 soup BKT, 1 lettuce cabbage, 1 braised chicken leg with 2 rice. Both dry and soup BKT is extra meat. For dry / soup BKT, you can only pick 2 types of pork parts, so we order another 1 extra bowl soup BKT just for its pork innards (pork stomach + pork intestines). What are the points that make their's version outstanding?
Firstly, Pork Belly (半肥瘦) just melts in your mouth whereby its fatty top part with skin is simmered for even longer hours maybe 4-5 hours, cooked till gelatinous texture top but tender firm chewable texture bottom as opposed to many other BKT that has rubbery (韧) texture top with hard chewy texture bottom when it is only cooked for 2-3 hours. Pork Belly cut size is also huge, so you taste fullness and huge satisfaction in one mouthful.
Secondly, Bak Kut Teh Soup is as legendary as its verdict carry. Soup taste profile is medium light herby at its front note when your tongue meets the soup, with a hugging punch of warm spices at its back note at the back of your throat. Thus, this is why it is so irresistible to keep slurping the soup spoon after spoon. I bet ratio of chinese herbs are a result of constant improvement for more than 30 years, for a delicate balance not to taste like medicinal soup but more like enjoyable soup. Generally, the BKT soup style for this shop is medium light version, so if you are expecting strong overpowering densely medicinal soup taste, it is not for you.
Thirdly, Pork intestines (猪肠) is one of its kind, special way of treating it where it is layered and folded to have a dense mouthful of soft layers when match with the soup. I bet this is a unique way of preparing where I never see it elsewhere that they serve with this method. Pork belly is also very soft with slight chewy texture and does not have any foul odour. Very good job.
Fourth, Dry BKT is good, many locals might put this as their favorite. Sauce is sufficient, not too dry as still have sauce to scoop with rice and not too wet until it is runny like soup. Inside have sotong hiris (吊片) to bring out umami flavor aside from the commonly used salted fish (咸鱼) in most BKT. I love my Pork Belly best with the Dry BKT cooking method.
Overall very well done, and will revisit again from a chef foodie point of view. I can write more and extend their other little things they took care of like service, practice of clean SOP, water tea drinking and much more but I think the focus from my point shall be strictly taste only so you get a better idea to select the best place to get your Bak Kut Teh. Once seated, you’ll be served with Fried dough and immediately can order. Their staff taking orders are mostly youngsters, who are pretty efficient and polite. The meat was cooked nicely, the lean meat is still tender and the fatty meat was bouncy chewy. There is taopok, Fuzhuk, mushrooms included, you can add in any ingredients such as enoki mushrooms. The dry BKT was so-so, but overall their meat portion was very generous. I would recommend just soup BKT. The additional bowls of Pork tendons and pork intestines & stomach was cooked well too. The tendons are soft and full of collagen, innards was well cleaned and properly prepared, no porky weird taste.
