My wife and I came here on a weekend evening and opted for the tasting menu with pairing and tried some additional dishes as well. Nice ambiance with a modern interior setting a great vibe. The service was extraordinary, the waiter explained all the dishes thoroughly and even included some history of the region with the dishes. The restaurant was accommodating for my wife’s gluten allergy which was great. The food was solid - standouts were the kanpachi tostada and the gazpacho. The other dishes were good but lacked flavor complexity. In particular the asparagus with cheese and grilled fish - they both good but seemed a bit simple for a tasting menu offering. I found the wine pairing to be decent as well but didn’t feel like it complemented the food, better as standalone drinks. Either way the price...

Had one of the best meals I’ve ever had at Maduro in La Paz. The aged steak was next-level—perfectly cooked, full of flavor, and honestly just melted in my mouth. And the barbacoa? Insane. Rich, tender, and packed with flavor in every bite.

What really stood out, though, was the attention to detail. You can tell Chef Ezequiel puts serious heart and skill into every dish. From the presentation to the flavors, everything felt super intentional without being over the top.

The vibe of the place is laid-back but classy, and the service was great—friendly, attentive, and chill.

If you’re in La Paz and love good food, Maduro is a no-brainer. Already planning...

All incredible and the service and personal yet unobtrusive attention from Rafa our server made dinner seem like casual but amazing dinner with new friends. We will be back in town in 1 week and no question we will be eating at Maduro!!
