The balance of textures and flavors was impeccable, from tender meats to crisp vegetables, spicy notes to comforting undertones. And oh, the drinks! Whether sipping a classic cocktail, a refreshing mocktail, or something inventive and unexpected — they were all spot-on. The mixology showed care and skill: beautiful presentations, superb balance, and refreshing, delightful flavor. The service tied everything together: attentive, friendly, and genuinely caring without being overbearing. We felt pampered, welcomed, and never rushed. In short: Simaruba is a gem. If you find yourself in San José del Cabo, do yourself a favor — go there. The food, the drinks, the atmosphere — every element comes together beautifully. I’m writing this as i am still waiting for my food after an hour, we received drinks and no appetizers. They offered a blanket because it is very cold and still haven't received it for over an hour. We have been told the food is coming 5 times. I will never come back here ever. The server wasnt overly friendly. Oysters were not good, sitting too long . Shrimp tacos over fried. Not much fish in crab tostada. Ceviche was very bland, minimal fish. Cheese board was okay , came with thin stale tasting bread. It honestly wasn’t even busy. They gave us two free desserts. Warm chocolate cake … delicious actually and crème brûlée which was super good too. The music was decent, I saw two heat lamps not being used which would have been nice since it was freeeeezing. In Cabo or San Jose the typical spots that apear nice can fail in the service and food category. Not the first time I’ve waited an hour or walked away. Try Don Sanchez
