Verbena was the find of our vacation in La Paz. For vegetarians, La PAz is not the greatest foodie destination. There are some pretty decent options but nothing mind blowing. For example, Buzos was a perfectly serviceable restaurant where we enjoyed multiple meals. All that changed with Verbena. I’m not much of a pizza nerd but I can recognize something special and this was it. There are many veggie options and I tasted pretty much all of them .. and they were sensational. Mushroom, 6 cheese, pistachio (wow!) and asparagus. I normally dont eat the edges (unnecessary calories without the toppings) but at Verbena, the marvelously blistered charred crunchy and airy crust IS THE STAR. And they serve all these pizzas with a condiment side - honey habanero honey, peanut chili and habanero .. all amazing. Oh and another surprise- an open face pizza bread burrata sandwich. Do yourself a favor if you want to taste the best damn pizza - I don’t exaggerate when I say it’s the best I’ve ever had. Anywhere. Read moreWhile shopping at the organic farmers market we were in back of a patron buying a huge amounts of fresh herbs and vegetables. We asked what army he was feeding and where do we apply. He said he was the chef at Verbena a restaurant close to the art museum and Amelier 21. Seeing all the fresh ingredients we knew we had to try it. We were not disappointed. The pizza, a Margherita was fresh and delicious. The dough was perfectly soft and chewy. The cheese firm yet elastic, the sauce fresh and tasty. I am not a food critic but I thought it was one of the best pizzas I have ever had, here or anywhere else. We also had the lasagna and a salad. All were good. The lettuce was cleaned well and NOT gritty. Gritty salad is something that I have been served many times at La Paz restaurants, I was happy that was not the case at Verbena. The staff is very friendly and attentive and greet you right away. That is a rarity theses days. There is a wood fire oven right in front of the bar area so you can watch them cook the pizzas, a great music to add to the ambience,, soft enough to enjoy conversations with those at your table recommend this to anyone.
