I've lived all over the world and eaten ramen in many countries across the Americas and Asia. I've never had anything called tonkotsu that was this bland. We got one with regular ramen noodles and one with rice noodles. They were both totally saltless and there was no salt on the table. It seemed like an ingredient was missing but they said otherwise
They also like most places in Mexico overcook the eggs, but it's not totally opaque yellow like some places. I would say 3/5 on the egg and 2/5 on the broth, which would have been underwhelming but tolerable if they had put seasoning and it was warmer
The sushi is certainly not worth trying just based on the ratio of pressed rice (not fluffy or sticky looking like normal sushi rice, even if it turns out to be seasoned). It's also not featuring any of the typical wonderful variety of local seafood for some reason.
Whoever the head chef is needs to watch a YouTube video and read the recipe (speaking as a former chef/cook/caterer). Chishu pork is fine, but that's really it. It also needs proper toppings

And the reason was because I seen the chef fron the back of street, I really saw his dedication and focus on his cooking…. Though to my self it was good. But today I decided to give it a try, after standing in front of the host for a few minutes…. While he was on his phone and watching videos on the computer he finally told us to sit anywhere. Another waiter ask if we wanted drinks… and 25 minutes later my drink was not ready…. Or even had taken our order.
