Found this hidden gem when looking for Italian Mexican fusion and saw the raving reviews and intimate experience watching the chef cook. When we arrived a group had just passed so were told to wait an hour, we almost passed BUT so glad we waited. Was one of our highlights in CDMX! Chatting with the business owner and his team was already a unique experience on its own - but we were seriously impressed by the actual pasta - we tried the Arrabbiata and there was SO much depth in flavors. The combination of ingredients and flavors was so refreshing and different from what we’ve had on this trip, fusion or not. You can just tell that it’s been thought through and tested. The pasta itself was freshly made and you can definitely tell from the texture. The barbacoa was a fusion mix between Italian and Mexican flavor. My wife absolutely loved it. My bolognase was very good and tasted extremely fresh. It had the perfect amount of spice but it was missing something to make it perfect. Maybe more garlic and some fresh basil but this is just personal preference or possibly because I'm accustomed to artificial ingredients and this is a, from scratch kitchen. The cooks are super friendly and chatty and the pasta is freshly made right in front of you. The dishes come together with some premade sauces/salsas and fresh ingredients chopped and cooked on the spot. Fresh pasta is cooked for 2 minutes and then tossed in the sauce. The portions are generous and the pricing is pretty inexpensive. If you're looking for classic Italian, that's not what you're going to find here. It's more of a Mexican/Italian fusion place.
