Visited recently, about 2.5 weeks into their opening. A few things: Don't ask me if my steak is properly cooked when it's presented. Serve me a steak properly cooked as I ordered it and know that it is. Mine was not, I didn't feel like sending it back. At this level of service, please don't put the cooking decisions back on the customer. Potatoes are cheap, and can be delicious. Truffle fries are nice, but for the love of god, don't serve them floppy. Twice fry them, whatever, youtube the Belgians. I walked past the next night and saw an even worse pile of limp curvy fries. Better yet, don't deep fry and do something with your grill. Mmmm. boil, then toss in herbs and deep fry, then warm up over the charcoal. You're welcome. Cocktails were delicious. Would have liked better wine choices, more reasonably priced. I'm happy to buy a bottle - I know you don't want half bottles open at the end of the night. I know I'm in Mexico, and maybe this is my own fault - I'm gonna have a rule that if I'm sitting IN the street, I shouldn't spend more than 100 pesos per person. This place breaks that rule. At this price point, I think find a way for some better real estate, a hotel courtyard or something. Not excited to watch a constant stream of lifted golf carts chased by Suburbans the...

It is on an extremely busy road with motorists screaming by the outside tables at 40moles per hour. The service was incredibly slow and several items on the menu were not available. OK, so that may not be uncommon in a restaurant that has (30) items on the menu, but Carbon on has six entrees and an equally small number of appetizers…
Everybody’s plate arrived at different times, with some of us almost finishing our plates before others had even arrived. The drink order was wrong.
But the best is yet to come… When we asked for the check, we were told they only accepted cash - no credit cards. Once again, not a surprise in a small Mexican town - but it is a surprise when the plates are $300 to $400 each and no one tells you before ordering…
Our bill came to $4,500 and they would only take cash. Who walks around a small Mexican back street - and yes, Carbon is well off the beaten path - with that kind of cash..?
Finally, the restaurant would not give us a receipt or accounting of the bill..!
This is a classic case of the restaurant “skimming” the parent company and if Carbon is willing to do that, so be it. But we cannot recommend this...
Read moreWalked by Carbon multiple times while on vacation and have to say the ambiance really caught my eye. Based on great reviews we decided to try it for dinner last night. Three in our party got the burger, one got the ribeye, and another got the tuna steak. We also had the provolone cheese appetizer. The food was delicious. My husband’s steak was cooked perfectly. The burgers were so flavorful, and moist. Let’s just say that never did I my typical ketchup and mustard for my burger.
The restaurant is small, I believe there are 5 or 6 tables outside only. Service is slow but slow in the sense that I can see it’s a small kitchen and they take pride in making the food hot and fresh for everyone so to me that is no big deal. I come on vacation to slow down so I appreciate not being rushed.
They only take cash, not sure if they take American dollars or not, we paid in pesos.
Definitely give this place a try. And if you are lucky you may get a flash mob of guys that roll up on dirt bikes, bust out a speaker and out of the blue start break dancing for tips. I also didn’t mind this and thought it was kind of cool. We gave them a little money for their...
