Really conflicted about our trip here, we came for my birthday and upon entering were greeted by 3 different servers all trying to upsell the drinks to us which we repeatedly told them no thank you, then one of them bought over a bottle of tequila and asked us if we wanted to try (maybe we were stupid for thinking but assumed it was a free taster - I’ve never experienced anything like this in a restaurant before) and proceeded to pour us a huge shot glass. Wait staff came off as really overbearing, we were the only ones in the restaurant trying to have a romantic meal while being watched by hawk eyes. Also they tried to upsell buying mole their to take home - it felt like a really uncomfortable sales pitch, I’m sure they’re obligated to do so but it just made us feel really uncomfortable in a restaurant setting. As well as this we believe we were over charged more 300+ MXN on our bill after our card was declined and had specifically asked to leave the tip in cash. The food was ok, it was nice to have a variety of interesting vegetarian options. Really can’t tell if we were taken advantage of for not being locals but this experience left a bad taste - I think their is some work to be done with how they serve their customers

Food is very basic, ordered all recommended dish and not tasty. The run out off the blanco mole which is what we were going to get. So the manager girl came and ask how can they made up, and she said how about order another steak. I thought it will be on house, but it’s actually on our bill. That’s the way they made up their problems. Then just say sorry and don’t “made up” And finally, the biggest bummer is the server Joe. Both my husband and I agreed that he is the worst server that we have encountered in the world. He never smiled never greeted us, looked like we own him a lot of money. He didn’t say anything just drop the menu on the table. Always tried to take our cup or dish away even after we told him to leave it. When we trying to order he just say everything we wanted was no, and pointed at the most expensive main course over and over. Btw, this 400 sucking pig dish is just ok. When we ask for the check, he just drop off the check without saying anything. During the card charging no words as well, just looks grumpy and silent. How on the earth this is an acceptable service. Masterpiece. One of the best meals I've had in Mexico. From the exceptional service, the lovely atmosphere, to the masterful execution of the dishes, this spot is legendary.

Romeritas: Soft delicate shrimp patties in mole. Really interesting texture and wonderful flavor.

Arroz con mole: We had the house mole in numerous ways, because it is just so good. A fascinating take on mole Poblano, this version uses no chocolate, but gets it's flavor and texture from the combination of dried chiles and textured with plantain.

Sopa de habas (lima beans). Wonderful soup, with some great acidity and depth. A perfect start.

Pulpo (octopus): Cooked perfectly, in an extremely deep, slightly spicy salsa. This was the winner of the night, especially with the house made tortillas.

Lechón: A more manageable take on the classic, with a perfectly crispy skin, pops of freshness and acidity to balance the fattiness. Tender, cooked perfectly.

Postre: We shared a merengue tart with fresh fruit, which was delicious, and complimented a small digestif to cap everything off.

Service was extremely knowledgeable and thorough without being overbearing. Highly recommended as a special occasion. Pricey but not...

Augurio was the recommendation of a local tour guide after disappointing gastronomy experiences at La Noria and Santóua Gastrobar with the inflexibility of the chefs to accommodate vegetarian dietary needs. Upon arrival I was greeted by Gerardo Vega the General Manager. I told him this was my last attempt at having a fulfilling vegetarian fine dining experience on my final day in Puebla. I shared my disappointment with La Noria and Santóua Gastrobar and Gerardo reassured me he would go to great lengths to make my time at Augurio memorable. The menu is full of vegetarian options and Gerardo and his team made the whole menu available for modifications as I needed. My server Rafael was timely, communicated with me and executed service above and beyond. I loved seeing Gerardo interact with all the guests, genuinely caring about their experience and addressing their needs. Gerardo’s employees described him as an excellent leader. Augurio filled my vegetarian belly with lots of deliciousness and I leave Puebla complete in my fine dining journey. Keep up the great work Gerardo and Rafael!

An excellent evening from the beginning to the end. All dishes we tasted - without exception - were delicious and prepared to perfection. The big surprise was the mole Poblano, that is prepared without the addition of chocolate but only bananas! The Puebla style corn soup was full of flavors. Similarly delicious were the stuffed chipotle chili. As main courses we chose the mole Poblano (with chicken breast) and the beef medallions with chipotle mole. Both dishes were cooked to perfection and as said, the mole Poblano was the best we ever had. Compliments to our waiter (Luis-Daniel) who was professional and extremely friendly. We had a memorable evening at Augurio and for sure we will return when we visit Puebla again.
