Casona de los Sapos Restaurant — Restaurant in Puebla

This is the restaurant inside the hotel. A few years back we stayed here and ate a lot of meals here, it remains one of Puebla's best fine dining options, but it's not stuffy at all. Come as you are, it has a casual, fun feel.

Salmon carpaccio: Good cured salmon is almost impossible to find in most of Mexico. This is better than most, but I don't think it's house cured. Served with garlic crostini, it's a good portion to split, or a light meal.

French onion soup: I'm a sucker for good French onion, and this one is excellent. Not a molten pile of cheese, but real gruyere and tons of perfectly cooked onions in a savory rich broth. Really nice.

Mushroom pasta: Perfectly al dente pasta, and not overdressed (here in Puebla pasta is usually swimming in sauce, here it's dressed lightly as in Italy. The pasta is the dish, not the sauce). A little truffle, a lot of mushrooms. Lovely. A tiny bit underseasoned, the pasta water could use more salt. But otherwise really good.

Mushroom pizza: we were feeling very mushroomy. Great ta crust, chewy, flavorful. Generously topped, but not overdone. A good pub style pizza. I'd come just for this.

Wine: Small thoughtful list. Check out the garnacha. Punches above it's weight. Would love to see a few local craft beers.

Dessert: Molten lava cake with vanilla ice cream. The cake was decadent, complex, rich. Perfect bite to share. The ice cream was a bit unfortunate, very icey, like it had gotten a bit defrosted and refrozen. No terrible, just not great. They serve it on a cute slate but it has no lip and the ice cream melts all over the table. I'd grab a dish with a lip for this one.

Atmosphere: Breathtakingly beautiful interior. It's just gorgeous.

This place is in a neat location: close to downtown, but also feels a bit off the beaten path. The building and its interior are stunning, and the menu of the restaurant is simultaneously traditional (i.e., the best of Puebla's really cool cuisine) and "out there" (i.e., some neat creations). The waiter was very personable and put all of us at ease immediately. In short, everything was shaping up for a great meal.

But the food was cold. There were eight of us, and at least 6 of the dishes ordered were stone cold. I had the sopa de tortilla, and the broth was room temperature. I also had a taco de pork belly, and it also was cold, to the point that the tortilla was breaking as I ate the taco. I am not one to send something back to the kitchen, but others in our group did. This was not just a thing of "could have been warmer," but rather a thing of not warm at all.

The final detail was that the head waiter, when he came to take our payment for the bill for the meal, was not apologetic. Instead of saying... "yes, tonight was a bad one, but we will work on doing better"... instead, he said "whatever you think is okay." That...
