This is a HIDDEN GEM in Amsterdam: a highly exclusive “chefs room” tucked inside the Dylan Hotel in Amsterdam - and it holds only six seats.

Young Chef Filip Hanlo has brilliantly crafted this deeply personal menu, showcasing his exceptional cooking style which is a blend of his Mexican heritage, with Japanese, and classic French cuisine.

The personal touch of chef’s Filip passionate storytelling through each dish makes it an emotionally impactful journey.

This dinner truly feels like you are dining in the privacy of chef’s home. 100% recommended.

🌮Food (5/5) Chef serves 9-courses with 13 moments in a “crescendo approach”, where each subsequent dish included an ingredient from the previous one, building a seamless and evolving flavor profile. Ingredients may include: Mexican chiles (not spicy), kombu, sake, lime, seaweed and a variety of high quality fish.

⭐️Highlights included: 🍽 Amuse: Wagyu Tostada w/ yuzu and Akami Tuna Tostada w/chile chipotle and passion fruit

🍽 Seabass Kombu-jime (using Japanese technique of curing the fish in kombu), bergamot, caviar, mexi-ponzu (chef used Mexican citrus) and a seaweed leche de Tigre.

🍽 Lobster lightly roasted on Lime Leaves. This technique of adding lime leaves in the BBQ was personal - since chef’s father used to do that. complemented by a beurre blanc sauce and salmon roe. With a freshly baked brioche served at then end to dip into the sauce leftovers.

🍽Turbot with Coconut Veloute: with leek, lima yucateca koshō, and amabuki sake. This dish, inspired by the chef's childhood, was silky smooth with a hint of coconut, perfectly complemented by the sake served in a private cup of your choice.

Drinks Chef carefully selected and handpicked the cocktail, sake, wine list, in collaboration with the sommelier.

👨‍🍳Service (5/5) The service was exceptional. Both the chef and his young French sous chef served the dishes themselves, adding a deeply personal touch. I was impressed that the chef not only prepared the food but also kept a detailed eye on the service.

🏠Ambiance (5/5) The ambiance was incredibly intimate and personal, set in a tiny room with only six seats, hidden within the Dylan. The feeling of exclusivity and being so close to the chef made the experience unique.

🌬️ One minor point of feedback: the ventilation; the small room with eight people (including the chef and sous chef) became quite stuffy. Better ventilation or an open window would have made it more comfortable.

We had an unforgettable evening at Até. Chef Filip creates magic in telling his stories through his food. The intimate setting (chef’s table for only 6 people) made the experience so special, and the 9-course tasting menu was a true reflection of his passion. He masterfully weaves in Mexican flavors, executes them with French precision, and adds subtle touches of his love for Japanese cuisine. Every dish was creative, personal, and beautifully balanced, a dining journey we’ll never forget! And to top it all, he has a wonderful personality. At only 28 years old, he has mastered it all! We had such a lovely time and I came home thoroughly inspired by his experiences and creations. Thank you for making our wedding anniversary dinner so memorable!
