Tried M Noodle Bar, a charming ramen shop in Leiden, located strategically in Beestenmarkt, right in front of the scenic canal waterfront.

I opted for the Mala Teriyaki Chicken Ramen, a delightful bowl that combines the rich flavors of teriyaki chicken with the bold, spicy kick of mala seasoning. The heat was well-balanced, adding a fiery warmth without overpowering the other flavors. The noodles were perfectly cooked, and the broth had a depth of flavor that made every bite satisfying.

My friend went for the Tonkotsu Miso Ramen, which offered a creamy and savory broth, blending the richness of tonkotsu with the umami of miso. The miso added a pleasant depth to the dish. It was hearty and comforting, the kind of ramen that leaves you feeling thoroughly satisfied.

We also tried the Chicken Shio Ramen, which had a lighter, more delicate flavor profile. The clear broth was seasoned just right, allowing the natural flavors of the chicken to shine. It was a refreshing contrast to the other, richer ramen options, making it an excellent choice for those who prefer a lighter meal.

I came here the first time a couple of years ago when it first opened and honestly, back then I wasn't too impressed. The miso ramen was mediocre and the atmosphere was a little dull. I decided to give it another try last week because the trains weren't running to get to den Haag (where I would usually go for ramen) and this time I was pleasantly surprised!

M Noodle Bat actually impressed me. The video inside was lively for a Sunday night, with lots of customers and friendly staff. Our order came really quickly, and looked amazing. I ordered the black garlic miso ramen, which was very good after I added some spicy chili oil. The pork was cut really thick, unlike most ramen restaurants I've been to in the Netherlands, which gave it some meaty heaviness. But it was tender and fatty enough to make it melt in your mouth. Delicious. I have to say, though- the tonkotsu miso ramen that my partner ordered had a better tasting broth. I recommend that one.

The only thing they could improve on is that the wall next to our table (one of the tall ones) was stained and needed cleaning. I didn't mind because it made the place feel more casual and homey, but maybe something to be aware of.

I really love this place!

The first time I went to this restaurant I did not think anything special of it, I ordered the Mala Chicken Ramen, because I am usually a big fan of chicken. The Mala Chicken Ramen was tasty, but not something I'd order again. A bit later I decided to order from them on Uber Eats, the packaging they use is amazing and ensures your noodles do not get soggy. I ordered the Black Garlic Ramen with Tonkotsu shio broth and these are the best noodles I have ever had. Their bubble tea is also a good quality. The portions are big, well filled and warm. The restaurant is small and authentic. They have a nice variety of ramen and other sides for everyone, they do not have many desserts though. I am now a regular customer because I really do love their black garlic...

So far I’ve always been a little bit suspicious concerning ramen restaurants. Afraid the food not being authentic. But I’ve been here twice now and I must say the food they’re serving her is really good. The gyoza’s really hot and juicy, the edamame steaming hot and salted. Also the ramen bowls were well filled and hot (I like my food hot and not lukewarm). The broth of the bowls were nicely creamy and full of flavor, the pork nice crispy on the edges and the cured egg perfectly cooked with the egg yolk creamy. Service was fast and the place packed. We made reservations and still had to wait like 5 minutes, but the staff did everything to get us a table as soon as possible. In my opinion it was a good value for money, spent approximately 100 for 4 persons (including 2 -alcoholic- drinks)
