We went for vlaai baking course. There ended up being hardly any baking at all. You pay about 30 euros for 2 hours. First 15 minutes are for coffee and tea. Then the teacher talks about all kinds of stuff for 20 minutes at least. At first it was interesting. Then it got rather clear that it was some rather spiritual stuff and a lot of stuff that didn't have anything to do with vlaai. Then we changed rooms and the guy continued talking about all kinds of stuff for another 30 minutes or so? He talked about crusades, people burning at the stake, politics and how we have to get closer to our inner self... When we finally got to actually baking there must have been about 40 minutes left. The baking was rather rushed because there wasn't much time left and the supplies weren't even enough, he constantly had to go get more. The 'baking' was more 'put the dough in the tray, scoop some filling in and put some extra dough over that' and that was that. We went over time because we had to wait for the oven. We did get some vlaai but honestly it was really not that special, normal bakery vlaai is better in my opinion. We did get to take the vlaai home with us and we got the full recepy online (although you can also just search for it) The place itself looked rather nice until you looked a little too long and you suddenly notice how dirty it is in there.

All in all, not worth the money, definitely go somewhere else if you actually want to learn how to...

Tucked away in the heart of Maastricht, Bisschopsmolen is a charming bakery that combines local tradition with warm hospitality. Known for its freshly baked sourdough bread, pies, and cookies, the bakery stands out for the remarkable freshness of its products. Pies are baked throughout the day, ensuring that each slice tastes as if it just came out of the oven.

Next to the bakery, the inviting cafeteria offers a wide selection of pie slices, sandwiches, and beverages. During multiple visits, I had the pleasure of trying both vegan pies and vegan sandwiches, each one consistently delicious and thoughtfully prepared. The staff are not only knowledgeable about their products but also genuinely helpful and accommodating, which enhances the overall experience.

Bisschopsmolen is undeniably popular, so expect a lively and bustling atmosphere. Seating can be limited, but the tradition of table sharing adds to the friendly and communal feel. Just ask politely and you’ll likely find a spot.

What makes this place even more special is its setting. Adjacent to and behind the cafeteria lies the Wasserrad, a beautifully preserved watermill that underscores the historical charm of the location. It’s well worth taking a moment to explore.

Verdict: Bisschopsmolen is more than a bakery. It’s an authentic Maastricht experience. Come for the pies, stay for the atmosphere, and don’t miss...

⸻

📍 General Information: • Location: Stenenbrug 3, 6211 HP Maastricht, Netherlands • Date of Establishment: The mill's origins date back to the 7th century and it is considered one of the oldest watermills in the Netherlands. • Name: "Bisschopsmolen" means "Bishop's mill."

⸻

🥖 What Do They Produce? • Sourdough breads are made with whole-grain flours. • Traditional Dutch fruit pies (such as cherries, plums, and apricots), called Limburg Vlaai, are among the highlights. • Products made with organic flours focus on healthy eating. • The mill grinds its own flour — one of the few fully integrated production facilities in the Netherlands.

Very, very popular place. They have several kind of Limburgse vlaai of which I have tried the rhubarb, cherry and apple and nuts. Be aware that the nuts that we had were peanuts, not walnuts or some other kind of nut that you would expect to be in a pie. They were all delicious. I’m partial to the cherry but I think strawberry would also be good. There are also a few vegan options as well which is very nice. Try to come earlier as they may run out as it gets busy. The service is hit or miss, as with a busy, touristy place. There are often lots of people in line waiting and it can be a bit chaotic inside so please be aware. Also, since the pies didn’t have labels on them we had to ask which one was which. Sometimes they bring out a fresh one which is worth checking out. Also, there is a small water mill behind that is worth checking out. Even though this is a very touristy place, I feel that the Limburgse vlaai here are worth waiting in line for.
