The sommelier menu at NOTK was the perfect way to end a great day of touring Rotterdam. The wine was definitely the star of the show, with all of the dishes created to highlight various aspects of what was in the glass (not the other way around, as with most tasting menus). Every wine that Thomas selected was outstanding and interesting; his descriptions (especially of the production processes) gave us more useful information for actually buying wines ourselves than we’ve gotten from all previous wine dinners combined. The food was also phenomenal! Local and sustainably sourced ingredients—many that had apparently been hand-picked and foraged by the kitchen team earlier that day—were brought together to create three fabulous courses. We started with an incredibly complex, new-style Champagne, sipped on the sunny patio of the hotel (yes, NOTK currently runs out of the lovely Supernova Hotel). We moved inside to the quaint and cozy dining room for the meal itself, which started with a “green” Pinot Noir from Burgundy, paired with stewed goat (sourced from a local fromagère) with fresh radish and herbs. Next, a surprisingly delicious Alsatian Riesling was paired with a pan-seared mullet and the most amazing, almost-candied leeks and local walnuts. For the third course, they graciously allowed us to take one cheese plate (a Chablis paired with a wonderful Gouda … clearly the Dutch keep the best Gouda for themselves!) and one dessert (an Italian dessert wine … forgetting the details … paired with a incredibly tasty sous vide rhubarb with granola). Led by two experienced sommeliers, Lukas and Thomas, NOTK is the go to place for wine and dining in Rotterdam. They import their own wines as well, but what sets them apart from most wine places is their attention to detail and although their focus is on wine, their food often rivals in quality as well as their hospitality. Despite their great knowledge and experience in wine and horeca, they remain down to earth and welcoming to all their guests.
You can order a la carte and ask for a wine suggestion, or go for a sommelier menu where they have a wine paired with each course. I can't comment on a specific dish as their menu changes every season and sometimes they have special dishes for their events. But their stews are always on point, I think their meat dishes are where they excell at. They use fresh and high quality ingredients, so the vegetarian options are also really tasty. I can't not mention their homemade sourdough bread, of course. It's made fresh and one of the best sourdough breads I've head in the Netherlands so far. We look forward to it each time we visit, it's the perfect vehicle to soak up the leftover sauce and juices!

Welcomed by the friendly Rotterdam staf the magistic menu got explained. Focus on wines, and dishes paired to them instead of the other way round. We choose for the a la cart dishes with a pairing of the sommeliers choice; fantastic! A mix between forgotten vegetables, pork belly and ribeye paired with a lovely white Burgundy and a fantastic balanced Nebbiolo that wasn’t even on the wines per glass list.
