I was excited to come back to this bakery. Unfortunately, the croissant I had was very disappointing. It was doughy, without the airy honeycomb structure you expect from a well-laminated croissant, a clear sign that it was underproofed. Without proper proofing, a croissant can’t achieve the light, airy layers that make it special. On top of that, it seemed to be at least 10 hours old: the butter had soaked into the dough and hardened, instead of staying soft and fluffy as it should in a fresh pastry. In my view, a croissant in this condition really shouldn’t be sold.

The pain au chocolat was a bit better. Its structure was closer to correct (though not perfect), and the chocolate filling was enjoyable. Still, the dough itself lacked taste and depth of flavor, which made the pastry fall flat overall.

I love seeing authentic French pastries offered, but these ones need more attention to proofing, lamination, and freshness to really shine.‐ My previous 4 star review A great place for a coffee and some French pastry. Some of their food is just delicious. Can be busy some times, but I have not figured out when as sometimes it is...

Attended this bakery by myself and waited patiently in line for 10 minutes with my service-level obedient dog to place a takeaway order at the till, during which time no one approached me or indicated that having him would be an issue. Got to the till after waiting in line only to loudly be refused service and practically pushed out of the restaurant by the red haired gentleman on staff, who insisted that if I were going to be allowed to place (even a takeaway) order, my animal needed to be tied up outside. It was terrible experience that made me feel intentionally embarrassed. Maybe their baked goods are fantastic, but I wouldn't know - it was an such a rude and unpleasant experience that I will...

The French Baker is absolutely awesome every time we travel through, so happy we found this amazing place. The owner knows a lot of the local people's names and there's always a happy welcome when we walk in the door. We even came in the back door one time when they had just closed the front door minutes before and we still got a welcome and served!!! Fantastic fresh pastries every day baked on the premises and the the flour for the flaky pastries is sourced from France! Great coffee and food be sure to visit and enjoy the awesome atmosphere too. Many thanks to the...

I have been stopping at the French Baker for all my coffees recently and I always leave in such a good mood. Their happiness is contagious! Today, I placed a huge take away coffee order, at a very busy time (So sorry team!!) but I just wanted to say I was really pleased to be greeted with nothing but smiles & kindness; even amongst the crazy busy time. The FOH staff took the time to find an easier way for me to carry the 12 coffees to my car. The coffee was also made SO quick (As always). These guys are amazing!!

The French Baker is an institution in Greytown and Wairarapa. Started many years ago by Moise Cerson and now for an equal time by Rusty who greets you often by name. A great host. A meeting place for locals and a great stop to stop for an excellent coffee and pastry for all.
