As someone who appreciates a truly authentic bowl of Vietnamese noodle soup, I have to say that the pho that I had here simply doesn't measure up. The most crucial element of a good pho is the broth, and sadly, theirs lacked the rich, and deeply savory character I've come to expect. It tasted thin and somewhat bland, missing the slow-simmered depth that defines a truly authentic pho. Banh mi ratios were off, it was on the dry side, but I believe it's because traditionally they slather on a mayo/butter sauce and lots of pate as well as lots of salad and meat. The bread is the only one like it in Wellington. It is classic - perfectly crusty and soft at the same time. If you know, you know and if you dont, please get this and you'll get it straight away.
