Intimo was the best dining experience we had during our week in Panama. We were seated at the bar, which allowed us to watch the kitchen in action (the other side of the bar would've allowed diners to watch the bartenders make drinks). The inside looks to only seat ~20 and they have a garden area for seating as well.
Daniella, the sous chef, took care of us so well. She was prepared beforehand from our notes that we were vegetarian, pointed out everything that was or could be made vegetarian, and was in general very lovely and friendly through the night.
We got the rice dish (great textural dish), the cacio (love the ramen noodles and citrus), burrata (the macha was amazing), French toast dessert with amaretto ice cream and the deconstructed tart with coffee ice cream - both of which were spectacular.
Strongly recommend anyone in town to make reservations...

And there's a great wine list to choose from, both by bottle and glass. But given how touted this place is for its food, I found it a let down. Two dishes of shellfish were overcooked and rubbery, and two of four large prawns hadn't had their "poop chutes" removed.
