As of right now, when you come to Tomillo, you should sit in the back courtyard. It is a strikingly beautiful area, clearly quite old, and cleaned up without ruining any of the original splendor. The food is served family style and is delicious and unique. The restaurant is easily able to modify dishes as necessary, and the tacos (altered to have chicken) were the best I've ever had. The vegetable dish was fantastic, and evoked flavors far beyond what you'd expect from the veggies on the plate.
During our meal, Felipe, the co-owner and chef, introduced himself and happily obliged our many questions about the food and restaurant itself. Felipe is passionate about his work and it shows in the restaurant. He mentioned the rooftop bar (opening January 2017) and was kind enough to give us a tour of it and each of the 5 floors on the way. The restaurant didn’t have pineapple available, which meant a few cocktails we were excited to try were off the menu. Still, we looked forward to the main course, as we each ordered different steaks cooked medium.
Unfortunately, my dry-aged hangar steak was burned to the point of being inedible. Our server said that dry-aged steak is “normally dry" but my issue wasn’t dryness—it was that the steak was burned and impossible to enjoy. On a positive note, my husband’s ribeye and my son’s NY dry-aged steak were both well-prepared and flavorful.
We decided to skip dessert at the restaurant and went elsewhere to celebrate the rest of the evening.

The service is friendly, attentive, and hits the right balance between leaving you alone to dine and chat while also being present to your experience. We dined at Tomillo the evening we decided to move to Panama, so it holds a special place for us. We had a sub par experience once and let them know.
