Bistro 101 — Restaurant in Dumaguete

An extraordinary gastronomic experience ! A real surprise ! What you get on your plate is very well presented, fine and delicious. Rarely you might find this level of excellence in the region. The composition of the dishes is well thought and executed. The sauces are original, the cooking is perfect. The quantity is more than enough. The service is attentive. Prices are unbelievably advantageous in terms of price/value level. You might find the decor too simple, but definitely it is not the most important and it is quiet, you can hear your guests! Try the risotto, the quails with its original sauce, the beef smooth in your mouth. Add one dessert. Compliment au chef! Unfortunately, after my last visit, things have drastically changed. People answering the phone, when they do, the are arrogant: "Don't you see on our website that we are closed?" This is not a way to attract customers. Impossible also to know when it's open or not. It's a pity as it was...

We really want to support this cooking school and think the chef is first rate... BUT, the meals are really inconsistent. Adobo this week is totally different from Adobo last week. Often half the menu is unavailable. Staff not trained in customer service, needing to ask for water, asking for drinks, asking for napkins, asking for knives for the meat dishes. Opening hours are sometimes random, we drive there and even though the outside board and internet say open...its closed. And to cap things off, a modest meal for 2 with soft drinks can be more thhan 1000. Regrettably too many turn offs for us to keep...

I wouldn't call the food Spanish, but rather fusion. The dishes themselves were excellent, kudos to the chef for them. Points to improve: the mashed potatoes were lacking both in presentation and taste. Even I can do better without trying. the wine was palatable, but the glass served was either half-full or half-empty. when the entire drinks selection consists of 4 options, it's unacceptable to be out...
