A new pizza joint has appeared in my sites so I had to try it. The base follows naples-styled pizza. They only served the pizzas in 12in. I had the margherita and meat lovers and so far this is what my taste buds have told me
DOUGH: Since the pizza follows naples, it goes from thin to a thick crust. However, do not be misled by the words of thick crust. The crust is chewy, soft and not a jaw work out. On the other hand, the base under the toppings is crunchy and does not dominate the pizza, but nicely compliment it.
SAUCE: The sauce is on the sour side, so for those who have a sweet tooth you may look away unless you're willing to try something new. The tomato sauce used in both pizzas is just right for me, so perhaps this part will be more biased. The sauce is not runny so do not expect a mushy dough or a waterfall. It is tart, but not so much where it is all you can taste. It is a very dominating flavor on the pizza, however it is as expected of neapolitan pizzas.
TOPPINGS: I'll start with the margherita, it had your mozzarella, basel leaves, and a dash of parmegiano reggiano. The mozzarella does not stretch here. As I was eating the pizza a good chunk of cheese would come off per bite. Perhaps it was because of the way I eat it where the fold from the long side. The cheese is subtle, going well with sauce underneath it. The basel added the freshness and aroma. Lastly, the PR added depth to the bite. You can easily tell which slice had more PR.
Now to the meat lovers, it had mozzarella, basel, mushrooms, prosciutto cotto, prosciutto crudo and salami piccante. Now the flavors here are not complex at all. Since all the of the meat mentioned are cured, they are on the saltier side. The cotto and crudo fattiness must have had cooked down into the pizza. The meats' saltiness along with the mozz went good with the sauce. The dominating flavor of the sauce has become more tame in this pizza, as if it all balanced out. Of course, basel offered its freshness when in the bite, but not as much this time. I did not taste the mushrooms at all, whether I bit into them or individually. I believe the meat and sauce completely took over any possible contributions the mushroom had.
Overall, great experience for me and my taste buds. Definitely looking out for more...
ย ย ย Read moreWow! I'm highly impressed with this pizza. Better than some of the authentic Italian places in Cebu. If you want delicious pizza and bread with high quality ingredients, order from this place. And on top of that, the people who work here are super cool...very nice and easy to talk to. I ordered the Pepperoni and the Hawaiian. Both were absolutely delicious. I was very impressed with the Hawaiian taste. I normally do not really like Hawaiian pizza but if you're married to a Filipina, you will order it a lot ๐. This Hawaiian pizza was not only edible, it was delicious! Also, the Jalapeno's made the pepperoni pizza perfect! The pepperoni is pretty much identical to pepperoni in the US.
Great job guys! You're the best I've had in the Philippines and maybe the best I've ever had anywhere...
ย ย ย Read moreFirst of all, sourdough is not one of my favorites but I love pizza. So, I didn't really know what to expect. We ordered the cheese pizza and the pancetta (double) pizza. Wow! Loved them, especially the pancetta! I, also, normally do not eat the crust but I did with these. So good and did not have that sour taste. I could've eaten the whole pizza myself. The front of the place is a bakery with all sourdough breads and pastries. Tried the croissants, and of course, delicious as well. So, brought home the milk bread and a baguette. Yum! I just wish that there was one here in California; I'd be...
