The owner himself, George Dapliyan will take you through the history, the process, and everything else about Sagada coffee. I was greeted by a slightly chocolatey aroma upon entering the cafe. That came from Dapliyan’s roasting machine just adjacent to this unpretentious cafe.
Certificates and accolades were on a shelf. He joined a prestigious coffee competition recently and landed fifth.
For one to really appreciate coffee, it is best taken black, say americano, without sugar. One will know if the roaster is able to bring out the beans’ qualities. I think we have found one of the best coffee roasters in Sagada. This isn’t your typical cafe where you can order pastries but I can vouch for the quality of their coffee. You’ll be amazed by the amount of knowledge they have in their chosen craft and you’ll be impressed on the quality they put on to their coffee.
