The arabica coffee beans of Sagada have already earned world acclaim yet when tourists visit, not all cafes and restos highlight these beans. If you want to truly understand and appreciate the notes of these Sagada beans, the best place to go to is Dapliyan coffee. The owner himself, George Dapliyan will take you through the history, the process, and everything else about Sagada coffee. I was greeted by a slightly chocolatey aroma upon entering the cafe. That came from Dapliyan’s roasting machine just adjacent to this unpretentious cafe. Certificates and accolades were on a shelf. He joined a prestigious coffee competition recently and landed fifth. For one to really appreciate coffee, it is best taken black, say americano, without sugar. One will know if the roaster is able to bring out the beans’ qualities. If the processing and roasting are not right, the beans will not taste right and delicious. Sure enough ,from my first sip till the last, the aroma and smooth, slightly bold taste of Dapliyan’s coffee was a pleasurable experience.

A heaven for coffee enthusiasts! I think we have found one of the best coffee roasters in Sagada. This isn’t your typical cafe where you can order pastries but I can vouch for the quality of their coffee. You’ll be amazed by the amount of knowledge they have in their chosen craft and you’ll be impressed on the quality they put on to their coffee. The owners were nice and we had a little chat on how they roast their coffee. We will surely return!

Tried their hot vanilla latte and iced americano. Both were exquisite. The best coffee I have tasted so far in the Philippines. We also got the chance to talk with Sir George Dapliyan, the owner himself. During our conversation, you can definitely feel the passion he has for coffee, and it really shows with the quality of coffee that they offer.
