The bavette was very nice, probably on the edge overcooked a little, but that’s what’s very important with bavette; the meat was great, tender, and tasty. Chef tip: even heating across the grill/pan is important when cooking bavette in order not to cook the edges too far while leaving the center right. A few minutes at each side and then a drop in heat will make the meat uniformly done from one end to another. A little resting before serving enhances the flavor and juiciness, too. The gravlax was awesome and probably one of the best things in the meal. A little lighter sauce in the seasonal mushroom pasta would have made it flawless, too. Perhaps a tad less rich sauce would allow the delicate flavors of the mushrooms to come out just a tiny bit more.
The Pornstar Martini was all well mixed but the glass it came in was so full that, once topped up with sparkling wine, it made it a tad tricky to pour into the main glass. A little more care in the actual pouring would enhance the experience—presentation was important but so was practicality.
Improvement in service can be added, though most of the waiting staff were very friendly and even checked in if everything was alright. One of the younger servers, though, seemed visibly upset, and this attitude found its way down to how he was communicating with us—slightly directive and cold.
