I wanted to try pani ça muesa (panini con la milza) in ballaro market but when i stumbled upon @PhilStraver's clip recommending Porta Carbone and seeing that its been around since 1943 + the more than 3k reviews, i went to Via Cala instead.

This is as authentic as it gets. Piles of rolls, pans of Muesa, fast service and not a tourist to be seen when we were there. You order from the counter, wait a few minutes as they prepare it, wrap it in wax paper then enjoy.
