Five stars for the experience. It's a unique ramen one should try at least once.
The bird's nest is mushrooms with tea quail eggs. You just choose a size and white or red broth and the size you choose denotes how much roasted chicken, chasu-style rolled/seared chicken, and ramen-style soft breast slices come in your soup, and how many quail eggs come in the "nest".
I don't like Tea eggs but the little eggs were soft boiled so perfectly they were actually great. You're given tongs to help with the bone-in roasted chicken.
They speak to you in Korean to let you know to taste your broth before adding salt or pepper. I get the red for some spice but end up adding a lot of black pepper anyway.
The soup itself is nearly unremarkable chicken soup. I usually prefer Tonkotsu because chicken soup has much less depth of flavor, but it's a cool experience and a nice chicken soup with no flaws. Read moreThis is kind of a ramen from heaven. Not the classic japanese ramen but still a deep, rich, complex and fatty broth with chicken meat that just falls of the bone.
Speaking of the chicken, you get like a full bone that has been oven baked, this gives a rich and a malliard effect that gives it almost a sweet flavor.
On the side there is kimchi that was also very good.
