Baluard on Provença stays at the top of my list because the team actually keeps the room cool and dry, a small miracle in Barcelona’s summer. Walk in and the modern-rustic bakery opens into a bright back area filled with greenery and plenty of seating, while a separate counter up front moves the take-away line quickly.
The temperature control pays off in every bite. Pastries come out crisp and flaky, never limp. The almond croissant shatters perfectly, buttery without feeling heavy, and the lemon pop cake surprised me in the best way, light and bright with just enough zest to keep me going back for one more forkful.
Service seals the deal. Alida greeted us with the kind of warmth that makes you feel like a regular, offered tasting notes on a few local specialties, and treated each order with care. Forget all the guides books , and plan atleast two days, to visit any of the many bakeriers of baluard.. i suggest two days because you have to return and try the other half of there products , that you cant try in one day... We woundt go to much in detaile , but they are a bakery 100% natural no adativos whats so ever... Just simple taste that bagutte baluard , or there famoso barceloneta, listen how that crust crumples exploding in your mouth with a fusion of tastes but most of all how it takes you back to your childhood and nannys kitchen... And really thats how real bread...

Tuna salad has lots of fresh tuna, sun-dried tomato and olives. Sandwich with cheese, arugula and sun-dried tomatoes had unexpectedly delicious savory taste and the rustic bread was full of olives which made it perfect accomplishment. And dessert... OMG their cheesecake is one of the best ones I ever had. It's creamy, light and... gluten-free (nice bonus!). Instead of crust I found the cherry. I will definitely come back.
