Choibap surpasses many South Koreans restaurants I have tried in Madrid and I consider it one of the best in Spain. Think first to go for the opening or reserve as the space is very limited. The restaurant opens earlier than Spanish restaurants (12pm30).
Choibap mixes well known dishes like Bibimbap, gimbap, kimchi, teokkboki, bulgogi with new items of the month like Kimchi soup or Summer dishes. The menu is reduced but also a proof of fresh homemade dishes.
The service is incredible. The owner will receive you with open arms and will attend you very efficiently (service in Eastern Asia is always faster and efficient for orders).
Don't hesitate to ask for suggestions if you don't know what to take. I recommend to try their bulgogi menu + rice + 3 dishes to choose as it is an interesting way to taste several dishes.
The dishes were fresh and perfect for hot summer. Kimchi was nice and middle spicy (probably they reduced the spicy level for locals). The fried egg pancake was also nice to try. But the bulgogi was the must in the assortment. It had the umami taste and the meat quality was very good. I'm sure Korean food would taste differently overseas but it felt close to.
Choibap proposes a variety of famous Korean alcohol beverages, flavored and non flavored (soju, makgeolli) and Korean beverages as well. I really loved the Podo juice which felt lighter and less sweet than grape juices in France.
The bonus is the small tapas they offer when you consume the beverage. The small fried sausage stick was super cute and tasty.

Before ordering, I specifically asked the waiter if one of the dishes was vegetarian (the ingredients listed on the menu for that item were all vegetarian/tofu, but I wanted to confirm because sometimes there’s “surprise ingredients” in dishes here). He said it was totally vegetarian. 20 minutes later when the food arrived, the dish I ordered was like 75% pork belly. I asked the waiter about it and he returned saying, “So sorry, we need to change that item on the menu.” But that doesn’t explain why I asked and he had confirmed that it was vegetarian before I even ordered it. Then it took 15 more minutes for my new dish to arrive. When the bill came, we saw they had charged us for a drink we didn’t order. Also, my husband ordered a dish that was supposed to be slightly spicy (had one chili pepper next to it on the menu) and it was SUPER spicy. He said it was way too spicy for him, he couldn’t finish it. Also, even though I had specifically asked for a vegetarian meal, they brought me a tapa with pork in it.
